Yesterday was bittersweet. Wylie, my 24 year-old son and partner-in-cooking during The Great Confinement, finished packing up his silver Honda Fit, took one last look around to see what he left behind (inoperable culinary blowtorch, heavy suede jacket, melancholy parents) and — with his girlfriend Nathalie in the passenger seat — hit the road for California.

It’s a scene that’s been happening all across the country during recent weeks, apparently, as life begins to return to normal. Whatever that was.

The reasons for the bitter part of bittersweet are obvious. The sweet part is my feeling of gratefulness for the time we all had together — Wylie was with us during the entire pandemic.

I can’t exactly say that while Wylie was here I taught him to cook. That started long ago. He asked for a crepe pan for his birthday when he was, I think, seven. He spent the last year of his time in college in Los Angeles wowing his housemates with Santa Maria barbecues or giant pans of baked ziti.

But when he rejoined us a year and a half ago to regroup post-college and embark on a job search, he still had a lot to learn — as we all do. I’m pretty sure that’s when I taught him how to deglaze a pan, though he’ll probably dispute that. I definitely taught him to make corn tortillas and miso soup, soufflés and Chinese dumplings.

What I can say is that while he was here, Wylie grew up culinarily. Cooking nearly every meal during the year of confinement allowed both of us to fully immerse ourselves in the kitchen.

Of course for me there was (and always will be) plenty to learn as well. We both learned from cookbooks, videos and websites, along with conversations with cooks — Monish Gujral in India, who taught us about murgh makhani (butter chicken, which his grandfather invented); An-My Lê in New York, my brilliant photographer-friend and home cook who taught us about bánh xèo (sizzling crepes) and pho ga; Yuyee Sakpanichkul here in Dallas, the chef-owner of Ka-Tip, who talked me through the way to build a Thai curry.

What surprised me most in all this was how much I learned from Wylie. He’s a quick study, and when he wanted to master a dish, he dove headlong into it — watching chef videos, reading websites (always seeing what Kenji had to say at Serious Eats), consulting cookbooks. Most of what he wanted to learn was French (Thomas Keller became one of his faves) or meat-centric. (Kenji, in case your internet has been out for the last few years, is J. Kenji López-Alt; his fans call him Kenji.) Yet Wylie is seldom satisfied that his teachers have shown him the best way. He absorbs their wisdom, and then pushes forward, questioning assumptions, making improvements. (I suppose the apple doesn’t fall far from the tree; that constant tweaking and evolution is the animating ethos of Cooks Without Borders.) 

One of the most useful things I learned from Wylie is his take on roast chicken. I had taught him everything I know on the subject, beginning with the late Judy Rodgers’ method of salting the bird a day or two before you want to roast, air-drying the skin, then tucking fresh herbs between skin and flesh and roasting simply in a skillet in a very hot oven. No need to baste, but you flip it twice. The result is an exquisite bird with wonderfully crisp skin. He tried that, tried Thomas’ Keller’s wet-brine method, which he was sure would be better (it wasn’t), tried CWB’s viral rendition of Lucky Peach’s lacquered roast chicken (impressed, but he tweaked the glaze). He tried other versions, too. We invested in a stove-top rotisserie, which makes a fabulous and very easy bird, but fixing the chicken on the rotisserie axle is a bit of a headache, and the thing can only accommodate birds smaller than three pounds, which aren’t easy to find.

After a year or so of experimenting, Wylie had settled into his preferred method. He feels salting ahead of time is best, but more often than not, when we want a roast chicken, we want it right now. One day, I suggested trying to pick up a supermarket roast chicken, something Wylie’s father and I used to do all the time when I was working at an office, and Wylie scoffed. “It’s just as easy to roast our own,” he said, “and so much better.”

Wylie’s solution to lack of time to salt and air-dry is hilarious: He pats the bird dry, sets it on a rack on a sheet pan and puts the pan on the floor with a small Vornado fan pointed at it for a half hour or so. Very effective! Then he finely chops a lot of thyme, distributes it between skin and flesh (sometimes suspended in butter), seasons inside and out, puts a whole lemon in the cavity and roasts — very simply. He uses Judy Rodgers’ basic method, heating a dry skillet on the stove, then setting the bird on it breast-up (at which point it makes a terrible loud farting sound!), and immediately putting it in a very hot oven.

Unlike Rodgers, however, Wylie doesn’t flip the bird. Rodgers’ method calls for turning it breast-down after 20 minutes, then flipping it back breast-up for the last five or ten to crisp the skin back up. Wylie doesn’t believe that there’s much (if anything) to gain with the flip, and certainly not worth the risk of the breast skin tearing in the process. He wants that perfect, crisp, browned skin.

After having eaten an adulthood’s worth of Judy birds and a year’s worth of Wylie birds, I daresay he’s right.

Last night, hours after he and Nathalie drove off, I needed roast chicken. Had Wylie been here, he would have insisted on roasting the chicken himself. Instead, I channeled him, with edits. 

As I started putting it together, I realized that I finally had something I’d long been seeking: the best streamlined way to roast a chicken with minimum effort and maximum impact.

Busy all day, I hadn’t thought of taking the bird from the fridge and letting it come to room temp. No matter. I rinsed it and patted it dry, tucked some thyme under its skin and salted it inside and out. Pepper on the outside, too. I tied its ankles together, heated a skillet, plopped down that bird, and shoved it in the oven, set at 450. Our ridiculous smoke alarm went off three times (though the kitchen was not smoky), making us curse and miss Wylie. I pulled out the chicken and took its temperature in the thickest part of the thigh, which the experts always tell you to do: 190 degrees — overdone!  How was that possible after just 40 minutes?

And then a lightbulb went off, and I finally understood that the thickest-part-of-the-thigh dictum is wrong. How many times have we pulled out the bird when thickest part registered more than 165, let it rest, carved it, and found that next to the bone, it was underdone.

So instead I inserted the thermometer next to the drumstick bone: 145. Not done. Back in went the chicken for another 10 minutes, I took the temp in the same place, and got 165.

Out came the chicken to rest — resplendent in its golden-brown skin. I made a little pan-sauce, having minced a shallot finely enough to meet Wylie’s exacting standards. (I used to be sloppier.)

I carved the bird, missing Wylie’s sharp carving knife. (He built an impressive knife collection while here.) We dined, Thierry sipping a glass of rosé, me sipping fizzy water, having reclaimed our two old accustomed places at the table for dining à deux. We toasted Wylie and Nathalie — and the adventure they’d driven off into.

And the chicken? It was perfect.

Cookbooks We Love: 'Ottolenghi Simple' is one of the most inspired — and inspiring — cookbooks in a decade

Backgrounder: Unless you’ve been cooking under a rock for the last decade (or only started cooking recently), you probably know who Yotam Ottolenghi is. The London-based, Israeli-born chef probably has had greater influence than any other in the world on contemporary American (and other Anglophone) cooking in the last decade. His kind of free-form, casual, herb-strewn, plant-based (whether vegetarian or vegan or not), sun-kissed, Mediterranean-inflected aesthetic informs the creative endeavors of cooking writers, chefs and recipe developers for mainstream generalist sites like New York Times Cooking or Washington Post Voraciously, as well as a generation of cooking bloggers, restaurant chefs and Instagram posters. If formal, carefully arranged, tweezer-food plates feel out-of-date, it is largely thanks to Ottolenghi.

Ottolenghi’s first title, Ottolenghi: The Cookbook — co-written with his business partner, chef Sami Tamimi, was published in Britain in 2008, followed by Plenty (2010); Jerusalem (2012, again with Tamimi); Plenty More (2014); Nopi (2014, with Ramael Scully); Sweet (2017, with Helen Goh); Ottolenghi Simple (2018, with Tara Wigley and Esme Howarth); and Ottolenghi Flavour (or Flavor, for the U.S. edition, 2020, with Ixta Belfrage and Tara Wigley).

Why we love it

Simple may not be as exciting or groundbreaking as Plenty or Jerusalem were when they were published (they are still two of my favorite cookbooks), but it is packed with an astounding number of recipes we want to cook over and over again, as well as recipes we can’t wait to try. As with his other books, the recipes work; rarely is there anything about them I’d change or tweak. Yet unlike many of his other books, these recipes are do-able by ordinary cooks who don’t want to chase down a long list of obscure ingredients or start preparing sub-recipes the day before you want to eat.

Most are designed to be simple enough so that you can achieve them on a busy weeknight — which is a big part of why the book is so incredibly appealing. It’s a book for the way so many of us want to eat — we want dishes that are delicious, plant-forward, interesting, healthful, satisfying and unfussy, and that’s what this book delivers, over and over again. If you keep a few key ingredients in your pantry (things the author calls “Ottolenghi Ingredients” — sumac, tahini, preserved lemon, black garlic and za’atar, to name half of them), plus staples like yogurt and green lentils and basic seasonal produce, you can often pull together these dishes without making a special shopping trip. Other times, there’s an easy swap you can make, if, for instance, you don’t have the suggested herb.

Two cases in point

Puy Lentils with Eggplant, Tomatoes and Yogurt (pictured above) is fabulous garnished with the fresh oregano leaves it calls for, but I’ve also subbed in parsley, mint or cilantro when I didn’t have any oregano, to delicious effect. I’m sure basil would be great as well.

And for a dish of Chickpeas and Swiss Chard with Yogurt, Ottolenghi grants permission in the headnote to leave off his suggested cilantro garnish should you find yourself without. The night I made it — entirely pulled together from stuff I had on hand — parsley and mint did the trick perfectly. The dish is the kind of satisfying and interesting main course I’m always wishing for on days when I want to do without meat. That night, I happened to whip it together to go with a dish my son Wylie had spotted and was making also from Simple — Lamb and Pistachio Patties with Sumac Yogurt Sauce. Both were wonderful.

You’ve gotta try this

Brussels Sprouts with Browned Butter and Black Garlic. When I spotted packages of black garlic (intensely umami-forward fermented garlic) at my supermarket a few weeks ago, I grabbed one; it lasts for two or three months unopened. Then, the other day when I was trying to imagine how not to be bored by the pound of Brussels sprouts I’d envisioned for that evening, I found this exciting-looking recipe in Simple. Fortunately I happened to have some pumpkin seeds and caraway seeds (of course those are easy to find). The dish was brilliantly quick to prepare: a 10-minute roast in a blazing oven, followed by a toss with browned butter and a quickly made paste of black garlic, caraway seeds and thyme. A big squirt of lemon juice, a drizzle of tahini and dinner is served. It was insanely good.

Maybe you’ve already tried this — Stuffed Zucchini with Pine Nut Salsa. We wrote about it last summer in a story about zucchini. I’ve also made and loved more dishes than I could fit in this story: Cucumber and Lamb’s Lettuce Salad; a mezze spread called Crushed Zucchini; Roasted Eggplant with Anchovies and Oregano.

On a sweet note

I wanted to try one of the twelve great-looking desserts in the book, but for every one I was missing an ingredient. (I’ve been snowed in for four days!). I baked a Blueberry, Almond and Lemon Cake from the book anyway, subbing in a bag of frozen wild blueberries and I had for the fresh ones. It was a treat, but I think it’ll be even better with fresh berries, as the frozen ones were a bit dull. Stay tuned for an update once the ice melts. Come summer, I’ll be excited to make his Plum, Blackberry and Bay Friand (a friand is a light almond cake that the headnote tells us is popular in Australia, New Zealand and France).

Also still wanna cook

Most of the book! The minute it’s asparagus season, I’ll make Roasted Asparagus with Almonds, Capers and Dill. And I covet Cavolo Nero with Chorizo and Preserved Lemon; Cauliflower, Pomegranate and Pistachio Salad; Roasted Baby Carrots with Harissa and Pomegranate; Roasted Beets with Yogurt and Preserved Lemon; Orzo with Shrimp, Tomato and Marinated Feta; Pasta with Pecorino and Pistachios; and Lamb Siniyah — “the Middle Eastern equivalent of a shepherd’s pie, with a tahini crust standing in for the layer of mashed potato.”

Do yourself a favor. If you don’t have this book, and these are the kind of dishes that appeal to you, treat yourself to a copy today. Flavor has been getting lots of great press — and it’s a good book — but the recipes don’t scream “cook me” (in my ear, anyway!) as loudly as they do in Simple.

Got romaine leaves? Turn them into tabbouleh- or tuna-cannellini salad-filled dream boats

It was a classic cooking-in-place moment: As I scrounged around in the fridge, even more mindful than usual of eating or cooking with every last veg before it wilted, I found a bag of romaine hearts that wasn’t nearly full enough to make a salad for the three of us.

The tender leaves still looked lovely, though — why not use them to scoop up something delicious?

More scrounging, and I found half a bunch of mint, two stray scallions and the better part of a bunch of Italian parsley: all things I didn’t have plans for in the next 48 hours and should be used. Got it — tabbouleh!

I knew I had bulgur (I do keep a well-stocked pantry) and a lemon, but there was just one hitch: no tomato. I did have some grape tomatoes, though — not the most flavorful things in the world, but the rest of the tabbouleh ingredients could lift them up.

Especially as I’d been playing with Annisa Helou’s tabbouleh recipe in her gorgeous, award-winning cookbook Feast: Food of the Islamic World. Her tabblouleh gets glorious depth from a Lebanese 7-Spice Mixture (sabe bharat) and cinnamon. (Don’t fret if you can’t manage the 7-Spice: Helou offers ground allspice as a sub.) If you do want to make the 7-Spice Mixture, here’s the recipe, which will fill your life with beguiling aromas, so it’s worth making just for that.

Into a salad bowl went chopped parsley, mint and those grape tomatoes (which I diced smaller than I would have an actual tomato), a little bulgur soaked briefly in boiling water and well drained, the spices, the juice of a lemon, a glug of good olive oil, salt and freshly ground black pepper. Tossed well, and onto a platter with those tender romaine leaves: voilà our excellent lunch on the fly!

After that I was thinking: This probably wouldn’t be the last time, during The Great Confinement, that we’d be faced with stray romaine leaves. Normally I’d tear them up and add them to other lettuces for a green salad, but salad greens these days aren’t necessarily a given. What else could romaine leaves be filled with?

Bingo: tuna and cannellini salad, which happens to be one of my pantry cooking favorites.

Bastille Day cooking made easy: How to conjure a rustic, fabulous French summer feast

Because I'm almost French (I've been married to a Frenchman for almost 22 years; one of these days I'll get around to applying for French citizenship), I love to celebrate Bastille Day. Going to a restaurant isn't usually what I feel like doing, partly because there aren't many good French restaurants in Dallas, where we live.

Referred to in France as le Quatorze Juillet, or la Fête Nationale, or la Fêt' Nat – never Bastille Day – the holiday rarely falls on a weekend, which creates a quandary: How to pull together something deliciously French after working all day?

This year, I think I found the answer: Make it rustic and easy, prepare a couple things the night before, invite friends over after work and light up the grill.

Laid-back apps – like marinated olives, asparagus vinaigrette, a freeform savory tart, maybe a saucisson or some store-bought pâté with baguette toasts – are totally festive with glasses of rosé, chilled Lillet garnished with orange slices, or (my favorite!) Ricard. 

Or hey – why not pour a pet nat, since it rhymes with Fêt' Nat! What's a pet nat? It's short for pétillant naturel – the natural sparkling wines, often from France, that are hugely popular in wine circles these days. (If you're new to the natural wine phenom, here's an excellent article, co-authored by my friend Michalene, explaining it.) 

Flipping through award-winning cookbook author Georgeanne Brennan's beautiful new book, La Vie Rustic: Cooking & Living in the French Style, I found plenty of delicious-looking inspiration, starting with her super-easy recipe for smoked trout pâté. 

Honestly, it couldn't be easier: You just mash together smoked trout with crème fraîche, lemon zest, chopped tarragon and one or two other things, pack it in a crock and that's it. While you can make it just before serving (in no time flat), it's the perfect thing to mix up the previous evening and let chill in the fridge. Serve it with Belgian endive leaves and crackers or toasts. Brennan writes in her book that it also works well with smoked salmon – something I'll be trying soon (with dill or fennel leaves, probably!). 

Also inspired by Brennan's book, I've lately become addicted to grilled artichokes. But while Brennan serves them with a yogurt-and-mayo-based herb dip (which also looks really good), I've been pairing mine with garlicky aïoli, one of my favorite substances in the world. This summer I can't get enough of it.

The artichokes can be mostly prepared the night before, as well – boil them, trim out their chokes, stash them in the fridge and make the aïoli (which probably even gets better as it sits overnight; the garlic mellows). When you're ready to serve them, just brush the artichoke halves with a little olive oil and plop them on the grill – along with halved lemons as a squeezable garnish, if you like.

For a main course, you can keep it super simple: Throw some duck breasts or a butterflied leg of lamb on the grill. You can even pick up a roast chicken (very French!) or two at the supermarket; serve it with Dijon mustard and cornichons, and French side dishes. You can blanch some haricots verts, for instance, and toss them with a little red wine vinegar, your best olive oil and some minced shallots; finish with fleur de sel and lots of freshly ground black pepper. 

Or make a warm French lentil salad – which you can either toss together in less than a half hour and serve warm, or prepare the night before and serve room temp.

Or, you know what? You can even do without a main course altogether, and just serve a bunch of delicious nibbles – French wine-bar-style. 

For dessert, there are lots of possibilities. One of the easiest is also one of the most delicious: a berry and peach crisp. Put the almond topping together the night before, and it's very quick to put together and throw in the oven. Top it with whipped cream, or crème fraîche (you should have some left over from the smoked trout pâté), or a combo. Or serve it with vanilla ice cream. 

Otherwise, if you make pastry cream the night before, you can put together a quick and easy berry tart – with the colors of the French flag!

Alternatively, you could make a chocolate mousse or pôt de crème the night before (yikes - I need to create some chocolate French recipes for the site – will do that soon!) Or play hooky from work and make a gorgeous stone-fruit tart. Or make profiterôles – cream puffs filled with ice cream and drizzled with chocolate sauce. That's another easy recipe I'll put together soon.

You could also do what so many French people do – pick up something lovely at the bakery.

Or take a tip from my French relatives, and slice up a ripe peach into the glass of red wine you've been sipping. It can't get any easier – or more delicious – than that.

Having friends over for dinner? Be sure to invite Mikie's fabulous marinated olives

One of the best parts of visiting my hometown, L.A., is dinner or lunch at my friend Michalene's. I've mentioned Michalene – or Mikie, as her family and a few close friends call her – in many posts. It was Mikie, for instance, who wondered, after a recipe for Chinese lacquered roast chicken changed my life, what would happen if I adapted it to duck. (Answer: more life-changingly delectable fowl play.) 

I met Mikie in 2003, when she was Food Editor at the Los Angeles Times, but I'd long been a fan. Before arriving at the Times a couple years earlier, she'd been Dining Editor at the New York Times, producing the Dining section that quickly, under her tenure, became a must-read. I hadn't realized I wanted to work at a newspaper – in fact I thought I didn't. But the minute I met Michalene, who invited me for a drink to discuss the possibility of my coming on board as her deputy editor, and she talked so excitedly about her love for cooking, and eating out, and editing and writing and putting together a food section, I knew I had to give it a go. 

Before long, we became not just co-workers, but fast friends. That meant we cooked and dined together often. It's one of the things I miss most about living in L.A.

So, dining at Mikie's. There are lots of great things about it. Hanging out with Mikie, and her partner Dan (who happens to be an amazing cook, too, and an awesome bread baker). They have an spectacular view of the ocean, over their rows of vineyards, from their house in the Malibu hills, so dinner's often on the patio. They are warm, generous, thoughtful and altogether brilliant hosts. 

 

I always secretly hope, as I drive up Pacific Coast Highway toward their place in Corral Canyon, that Mikie will have made her fabulous marinated olives: They're just so much better than any other olives anywhere, perfumed with orange and herbs, and spiced just so – a dreamy pre-main-event nibble.

A couple weeks ago, with friends coming to a dinner with a Spanish theme, I thought, as I tried to figure out the tapas y pinxtos, hey – why don't I make Mikie's olives? I texted her, asking for the recipe, and she told me it's from Mark Bittman's How to Cook Everything. – just tweaked a little. She adds orange zest, she tole me, and fennel seed. And she uses more vinegar than Bittman does, and less olive oil. Oh, and her technique is slightly different.

In other words, Mikie has made the olives her own. Honestly, I think it's the orange zest and fennel that knock them out of the park. 

How good are they? Well, I spent all day cooking to prepare for that dinner. I made bandilleros – all kinds of pickly and cured treats, prettily skwered. And some really nice tapas – piquillo peppers filled with brandade. And grilled asparagus with Serrano ham. And seafood paella. (OK, I blew the paella, if truth be told. Overcooked it terribly. Don't tell anyone.) Want to know what got the most applause? Mikie's olives. 

They take all of about five minutes to put together: It's just assorted olives (I like to use Castelvetranos, Picholines, Niçoises, Cerignolas and anything else that looks great – with pits), plus a few smashed garlic cloves, bay leaves, thyme branches, red pepper flakes, fennel seeds, orange zest, olive oil and red wine vinegar. Combine it all, and let it sit on the counter all afternoon – or even just an hour. Give it a toss with a spoon every now and then. That's it.

Easy pan-roasted seafood antipasto turns a simple pasta dinner into a special event

A funny thing happened on the way to my okonomiyaki.

You know, okonomiyaki – the Osaka-style seafood pancake that homesick Japanese transplants in America go wild for. It's sort of become a cult thing, maybe because it's crowned with katsuobushi – bonito flakes – which wave mysteriously around, making the thing look as though it's alive.

I'm working on a recipe for okonomiyaki; I promise.  You can see a video of my last attempt (it's close! nearly there!) on my Cooks Without Borders Instagram feed. In fact, I'd bought all the ingredients to make it a few days ago – squid, shrimp, scallops and more, thinking I'd nail it that evening.

"Oh, man," said Thierry. "Okonomiyaki again?!" Yeah, yeah, I'd already made it twice in just a couple weeks, but the third time's the charm, right? Recipe development can be a process of trial and error, and this one – which diverges from traditional ones – has proven to be tricky. 

But I'm nothing if not flexible, so I did a quick pivot – Japan to Italy. I knew there was a bottle of crisp white wine in the fridge, along with some parsley, and baby arugula. We have a giant rosemary bush out back. A warm seafood antipasto, I was thinking – that would be lovely with an arugula salad. It would be nice to eat light.

I turned to an old favorite cookbook for inspiration: Evan Kleiman's Cucina del Mare: Fish and Seafood Italian Style. Kleinman is a wonderful chef who for many years had a beloved restaurant in Los Angeles called Angeli that delighted Italian food lovers for decades. When I moved to Dallas in 2009 as a then-incognito restaurant critic, a commenter on one of the local food blogs tried to out me by posting my photo online. Ha! The photo wasn't me, it was Evan Kleinman. That cracked me up. Nice try, amici miei

The recipe I found was for pan-roasted squid, calamari arrosto. Kleiman gave the squid a toss with olive oil, fresh rosemary, garlic, salt and pepper, popped it in the oven, roasted it for 25 minutes, then gave it a squeeze of lemon and a parsley garnish. Nice!

I used the same method with the shrimp, squid and scallops, tossing in some halved cherry tomatoes. It worked beautifully. And so easy. 

We poured glasses of crisp white wine, and I tossed an arugula salad. We sat down to a perfect, light, simple dinner, which incidentally would also make a lovely lunch.

In spite of its simplicity, the dish's taste is pretty snazzy. I'm always looking for an easy and delicious antipasto to jazz up a pasta dinner, and this certainly fits the bill.

Warm, tender (thoroughly cooked!) asparagus is a simple, wonderful pleasure

If you've never had properly cooked asparagus, you're missing out on something wonderful indeed.

I was reminded of its simple and irrefutable pleasure on a recent trip to Mexico City, over lunch at Máximo Bistrot Local, Eduardo García's glammy restaurant in the Colonia Roma neighborhood. I chose as a starter "espárragos, holandesa, ajo tostado," and loved what was set before me: fat, jumbo asparagus, beautifully trimmed and peeled nearly to the tips, poached to almost custardy tenderness and served with luscious, lightly lemony and perfect hollandaise sauce on one side and silky, buttery pea purée on the other. 

Classic hollandaise for me is a luxury (maybe it's time to rediscover its joys in a post!), but the real revelation on that plate was this: So many professional kitchens send asparagus spears to the table undercooked that if you're accustomed to eating it in restaurants, it's entirely possible you've never experienced how luscious it can be.

Undercooked asparagus, crunchy and forbidding, can taste like a punishment. But if you simmer asparagus long enough to cook it through, its texture becomes soft and almost creamy, and its lovely flavor comes into full bloom.

 

It's worth taking the time to peel it first. First trim off the woody end of the stalk, then use a vegetable peeler to (gently, so you don't break the stalk) peel it about two thirds of the way up to the tip. I find that letting the spear rest flat on the cutting board and using only very gentle pressure to peel gets the job done most easily. 

Set a pan of salted water to a boil, add the asparagus and cook, covered, until the spears are tender. How long this will take depends on their thickness. Medium-thin to medium spears will take about 3 1/2 to 4 1/2 minutes, jumbos a bit longer.

But rather than time them, I lift them gently with tongs, and when they're just a bit floppy, like this:

Then I might serve them warm, letting a small pat of butter melt over them first if that's my mood, or leaving them plain if I'm going lo-cal.

If you know your way around a kitchen, you won't need an actual recipe for this, but in case you do, here you go:

Once you discover or rediscover this simple pleasure, you'll probably want to branch out. You can prepare the spears this way, skip the butter, pour a vinaigrette over them and serve them either warmish or room temp. You can also shock them in cold water, chill them, then dress in vinaigrette later. For the vinaigrette, I might go one of four ways: simple vinaigrette with a little Dijon mustard; the same boosted with a dab of anchovy paste; dressed in a simple vinaigrette then garnished with crushed pink peppers; or dressed in a shallot vinaigrette.

Last spring, I became obsessed with gribiche, which continues to show up on fashionable restaurant menus. Whether you make a classic version or a more modern one (like the new-wave one shown below), it's spectacular on poached asparagus. 

 

Of course there's an exception to the thorough cooking idea: Shaved raw asparagus can be wonderful in salads or as a garnish on fish or chicken dishes. But when you do choose to cook them, the lesson of thorough cooking holds for other methods besides poaching: stir-frying, roasting or grilling. (Lots of people steam asparagus, but it's not a method I love for this veg.) In any case, if you cook them past that hard, green-tasting crunchiness, they're so much nicer.

How to fool your friends into thinking you shelled 9,000 English peas

When spring rolls around – and even before – I start craving asparagus. And strawberries. And English peas. 

Unless you live near a farm, grow them in your garden or have access to a great farmers market – and depending on where in the world you live – finding sweet, tender English peas can be a real challenge. If you're lucky enough to find English peas at a supermarket, they're likely to be hard and woody, or if they're still small and tender, they'll likely have lost their sweetness. 

The solution? Frozen peas. That's right – they're actually really good, especially if you pick up the tiny ones sometimes called petits pois. I usually have a bag or two in my freezer – even in springtime, when we're all focused on what's fresh. 

And nowhere do they show better than in this wonderful soup, based on traditional French potage Saint Germain. 

 

It's the easiest thing in the world to whip up. Wilt a head of soft Boston or Bibb lettuce in butter. (Hey, this is like a salad within a soup!) Add a couple bags of frozen peas, stir and cook 10 minutes. Add water, and a few fresh mint leaves and simmer for 20 minutes. Whirr it up with a stick blender, et voilà. Garnish it with a dab of crème frâiche. Or not. That's it!!!

It's vegetarian. And it's a knockout. Serve it to your friends, swearing you shelled 9,000 English peas for their pleasure.

My favorite roasted potatoes

I have to ask you to forgive me. I've been so busy putting together Palate, The Dallas Morning News' annual food and wine magazine, that I have been a delinquent blogger.

I promise I will make it up to you: I have a couple of really cool stories in the works. One will feature a guest cook I'm really excited to introduce you to – Susie Bui – who stopped by the house a couple weeks ago to show me how to make one of her favorite Vietnamese dishes. The other is a Japanese story I've been working on for some weeks.

In the meantime, I have this for you: my family's favorite roasted potatoes. They're super easy to make and incredibly delicious. I would even say crazy good. I don't know who invented them, but I think it must have been my dad, who was a wonderful natural cook (he picked up the habit later in life). My brothers and I all make them. Or maybe it was my mom; I don't really know, but I'm calling them Brenner Family Roasted Potatoes. My parents divorced when I was a teenager, and these potatoes were staples in both of their houses ever after.

The secret is letting the oven do all the work for you: Roasting gives the potatoes a deep, rich flavor and a wonderful texture – creamy soft inside and sort of chewy and crisp on the edges. And the roasted onion, which falls into petals when you cut it up through the stem end, melts into fabulous sweetness. If I could eat these potatoes once a week, I would. 

Before roasting, I toss them with lots of fresh thyme, but you can just as easily use rosemary – or both together. And of course a little olive oil, salt and pepper. That's it. They make a great side dish for just about any fish, fowl or meat. I love them with roasted branzino (and that makes an easy dinner for which you don't even need to turn on the stove), or roasted chicken, or sautéed pork chops – your imagination is the limit.

Steal this salad! Escarole, crispy prosciutto, 6-minute egg, shaved parm and lemon add up to a spectacular starter

Desperate times call for desperate measures.

You're bored with Caesar. Fed up with the wedge. Finished with chopped. But where, or where, is the simple yet stunning salad of your dreams?

If you don't have it, steal it.

That's what I did.

One night back in December, Thierry and I were having dinner at Sprezza, chef Julian Barsotti's Roman restaurant in Dallas. Thierry first saw it on the menu: an escarole salad with egg and prosciutto. "We're having that," he said. He doesn't usually make such definitive pronouncements when I'm dining for work, but there it was. He had to have it. 

I would have ordered it any case (wouldn't you?).  It was pretty simple, just the bitter winter greens dressed in a lemony dressing, with crisped prosciutto, shaved Parmesan and a halved five-minute egg. (At least it looked like five minutes; it had one of those perfect, just-set, almost gelatinous bright golden yolks.)

The salad was as wonderful as it sounded and probably looks. The touch of lemon was exactly right with that salty ham. I knew it had to be mine. I would go home and recreate it. Steal it. For you. And for me.

With just one tweak: When I ate it, I wanted some of the egg in every bite, so I had to cut up that halved egg and toss it in a bit. I'd address that in my steal.

The first time I made the stolen salad, I was sort of stymied: couldn't find escarole at the two supermarkets I tried. With friends coming for dinner, I punted, and used Belgian endives. 

As I slid a baking sheet of prosciutto slices into to the oven, I thought about the dressing. Shouldn't be too hard to figure out. I'd keep it simple. Basically just lemon juice and good olive oil. Probably no added salt because of the salty prosciutto and the cheese. The bitter edge of the greens would be balanced by the richness of the egg.

I was getting hungry thinking about it, so nibbled on one of the prosciutto crisps. You can do that too: No one will know.

For the egg, I was a minute off. To achieve a perfect yolk, bring the eggs to a boil in cold water, remove the pan from heat, cover it and let the eggs sit in the hot water for six minutes. Drain and run cold water on the to stop the cooking. Perfect.

The salad came together beautifully, even with the endives. Frisée would work too. Or a combination of the two.

Next time I found escarole, and the salad was everything I hoped it would be; it was exactly the right starter for a pasta dinner with close friends. My pal Georges, a former chef who is even more critical than I, flipped for it. 

My new favorite winter salad is ideal for entertaining, as you can cook the eggs, crisp the prosciutto and wash and dry the escarole ahead of time. Just before you sit down, make the simple dressing, throw the greens in a bowl, add the eggs, toss it all together, then garnish with the prosciutto and shaved parm.

Smashingly elegant roasted cauliflower soup may be the easiest, most versatile starter in the universe

There's nothing easier and more satisfying than making a fabulous soup simply by simmering vegetables in chicken broth then puréeing them till smooth and velvety. It's something I've done a million times, with so many different vegetables: broccoli; leeks with potatoes; asparagus; cauliflower or a combo of several. 

It has long been one of my go-to soups when I want a quick weeknight fix that's satisfying and delicious, but also low calorie, super healthful and dairy-free. A serving is only about 100 calories, and it's packed with nutrition. It needs no cream for its lovely body, though if you want to enrich it with cream or crème fraîche, that's a different kind of great. 

I've also, on many occasions, served a cauliflower version as a starter at a dinner party. Why? It's easy and stress-fee, you can make it ahead, everyone loves it, and you can dress it up with so many kinds of garnishes. Crisped-then-crumbled prosciutto (or yes, bacon). Shaved white truffles (if you're lucky enough to have one). Fried sage. You could even substitute vegetable broth for the chicken broth, and voilà, it's vegan.

A couple nights ago something dawned on me. I love this soup. And I love roasted cauliflower. Why not roast the cauliflower first, as an easy way of deepening the flavor?

And so I did, and served the soup – garnished with a swirl of brown butter – as a first course for a French-themed Christmas Eve dinner.  It was a hit. It's really kind of incredible that you can get such a bang from such few ingredients (three), and such humble ones (cauliflower, chicken broth, olive oil. I'm not counting white pepper). Plus the garnish, which is just butter.

The next day, I did it again, and garnished it with harissa sauce – made in two seconds flat by combining harissa from a tube with a little chicken broth. Swirled that in, I did. And wow. It gave the soup a completely different character: exotic, North Africanish. Delicious. I love harissa. 

If you love cauliflower, please try this soup. I guarantee you will love it.

 

 

 

Congratulations: You have found the Brussels sprouts recipe of your dreams

It's a Brussels sprouts world; we just live in it. 

Did you hate them once upon a time? It's understandable: In olden days (like 10 years ago), people would boil those little orbs, so biting into one was like eating a small head of boiled cabbage. Ugh.

No more. Now we now that you can roast 'em or sauté them, and they're delicious. My favorite Brussels sprouts dish involves pulling off every leaf, then slicing the centers, and sautéing it all with mirepoix and pancetta. Very delicious, and very labor-intensive.

This recipe is almost as wonderful – and 9 billion times easier. It's a no-brainer. You can cook this with your eyes closed. You can make it ahead, and serve it later, reheated. Or serve it right away. Or serve it room temp. 

All you do is this. Cut the Brussels sprouts in half or quarters, depending on their size. Toss them on a baking sheet with a little olive oil and diced pancetta. You can even cheat and buy the pancetta already diced, at Trader Joe's. I won't tell anybody.  My little brother Johnny, an ex-chef, taught me that trick. If Johnny says it's okay, it's okay. 

Want to make a vegan version? Just leave out the pancetta and add about a quarter teaspoon of salt.

Roast the sprouts in a hot oven for 25 minutes. Boom, that's it. You're done. You're ready to eat – with whatever gorgeous roast or braise or take-out you've dreamed up. Vegan or not, here we come.

Delicious, soul-warming super-detox lentil-kale soup: Why wait till January?

It's only mid-December, and I'm already feeling like eating clean – at least in-between holiday parties and festive feasts. And here in Dallas, it's soooooo cold outside! 

What could be nicer, in such a circumstance, than the prospect of a big pot of soul-warming soup simmering on the stove? I'm thinking green lentils. And turmeric – for its strong anti-oxidant properties. And baby kale. And then a bunch of other stuff to make it delicious. 

That's what I thought yesterday morning, when it was 70 outside but I knew it was headed down to the 40s by the afternoon. 

I already had everything I needed to make the soup coming together in my head, except one key ingredient: I headed out at around 11 to pick up a cello-pack of baby kale at Trader Joe's.

By lunchtime the soup was ready – and the house filled with wonderful aromas. That's how quick and easy it is to achieve. 

The only work is chopping a few aromatic vegetables (onion, celery, carrot, garlic) and opening a can of tomatoes. (Make sure your tomatoes don't have sugar in them, or the soup won't be so detoxifying.) Sauté the veg in a little olive oil, add turmeric, coriander and herbs, then  the lentils, tomatoes and water. 

Did I mention that the recipe is vegan?

When the lentils are tender, throw in a bunch of baby kale, then let a cook a few more minutes till it all comes together. Lentils cook pretty quick, so it'll be done in just about an hour. 

Oh, baby – it turned out even better than I dreamed: lightly spiced, aromatic, earthy, soulful and satisfying. I knew Thierry would want some: Lentils are one of his favorite foods. But even Wylie (yes! He's home for winter break!) went along for the ride – that's how good it smelled. He'd just awakened at noon (college kids!) and had a bowl with us, just after his bagel and coffee. He loved it.

Here's the best part.  When I woke up this morning it was 15 degrees outside – 4 with the wind-chill factor. The tree is now decorated. We have plenty of firewood. This evening, we're going to our friends' holiday open house. 

Meanwhile, I know what I'm having for lunch.

Ta-dah! This glorious roast lacquered duck is a game-changer for duck-lovers

Ten months ago, a recipe for Chinese lacquered roast chicken from Lucky Peach 101 Easy Asian Recipes changed my life. It's brilliant and simple, and because it changed my life, I thought that was the end of that, recipe-development-wise. But the first time I wrote about it, my friend Michalene said, provocatively, "Have you tried it on a duck?"

I couldn't wait to give it a go. Unfortunately, it flopped: The duck's skin burned before the meat was cooked enough.

A mission was launched. I felt this duck could work, and I would find a way to make it work – even if I had to roast a hundred ducks. 

The very next try I got incredibly lucky – hitting the timing and temperature exactly right. What I got is what you see here: a gorgeous, shining, crisp-skinned duck whose meat was perfectly seasoned, wonderfully tender and incredibly succulent and flavorful. I couldn't believe something that insanely delicious was that easy to achieve. I made some Chinese steamed buns to go with it, and served it with cilantro, sliced scallions and hoisin sauce from a jar. But the duck needed no accouterments – it was incredible on its own.

You don't have to give it an Asian spin, though. The duck works beautifully as the centerpiece of a festive European- or American-style feast, surrounded by things like roast potatoes or sweet potato gratin and Brussels sprouts or braised Tuscan kale. 

Here's how easy the killer duck is to achieve.  It takes some time – two days – but very little effort.

Two days before you're going to serve it, you paint the bird with a glaze made from half-honey and half-soy sauce, and scatter salt on it. Slide it (uncovered) on a pan in the fridge. Next day, paint the bird all over again with the leftover glaze, and let it sit uncovered in the fridge overnight again. Next day, roast the bird at 450 for ten minutes, turn the temp down to 325 and let the bird roast for two hours. 

That's it. No flipping the bird or basted or fussing about it in any way. No need to make a sauce to go with it – it's that delicious. It's the perfect dreamy dinner for two or three people.

But here come the holidays, I thought. Wouldn't it be great to make two ducks and make them star of a dinner for four two six? So I invited a couple of friends over, and made glazed two ducks. Into the oven they went, and when my friends arrived, the house was filled with their enchanting aroma.

An hour later, after nibbles and drinks and general optimistic glee, we took our seats at the table. But these two ducks were not as wonderful: Set just next to each other on their rack set in a sheet pan, they crowded each other, preventing even browning. One side of each bird was a wee bit flabby, and I had to turn them and leave them in the oven longer, monkeying with the temperature to brown them properly.

Back to the store I went, seeking more ducks. 

Fresh ducks have a funny way of showing up in stores at exactly the moment I'm not planning on making one. It's just like the hair-dryer in the hotel rule. If you pack a hair dryer, you'll find one in your hotel room when you check in. If you don't pack one, you won't find one.

So, with two more friends invited for Saturday night duck dinner, on Wednesday I headed to the Whole Foods Market where I'd recently seen those gorgeous fresh ducks – at a much lower price than the last place I picked up a couple. (They set me back a whopping $45 each at Central Market; at Whole Foods they wanted $30-something each for 4 1/2 to 5 pound ducks.) When I arrived at Whole Foods this time, alas, there were no ducks to be had. I almost called another Whole Foods, when I thought better of it, deciding instead to head to the giant Asian supermarket, Super H-Mart, that's only a 10-minute longer drive from home. 

I thought I'd find fresh ducks at Super H-Mart, but I only found frozen ones. That was the bad news. The great news: The nice-looking Long Island ducks were only $16.50 apiece. Fortunately, they defrosted quickly enough for me to glaze them on Thursday. 

This time I solved the even-browning problem: I set them as far apart on the sheet pan as I could before roasting them. I thought I'd have to rotate the birds halfway through roasting for even browning, but those ducks continued to brown evenly as I looked in in them now and then. The space between them did the trick. Oh, man, they looked good – and they were!

This time I served them more Euro- or American-style: We started dinner with a baby kale and sweet-potato salad, then had the duck with roast potatoes and roasted Brussels sprouts with pancetta. It was a super-easy dinner to put together, as I literally never turned on the stove. (I'm lucky enough to have two ovens, though you could always make the potatoes ahead of time and reheat them and roast the Brussels sprouts while the duck is resting.)

Chicken soup is the most soothingly delicious (and supremely restorative!) thing in the world for what ails you

How are you feeling? Not so great? Yeah, I thought so. 

When someone sneezes chez moi, I reach for a chicken – to make soup. It's what my mom always did. And I've always used her recipe.

And if the husband or the son or whoever happened to sneeze isn't actually under the weather, all the better: The chicken soup idea has been planted, and I can't shake it. As the soup simmers, it fills the house with wonderful smells. Chicken soup was the fragrance of my childhood (along with Chanel No. 5, but never at the same time). And I always find diving into a big bowl of chickeny broth with carrots, celery and noodles to be supremely restorative. No one needs to be ailing for chicken soup to be a splendid idea. 

Lots of cultures celebrate chicken soup. There's Chinese wonton soup, Thai thom ka gai (with coconut and lemongrass), Mexican tortilla soup and many more. I love them all.

But for Ashkenazi Jews, no matter how far-removed we are from the old country (wherever in Eastern Europe that may be), it's a primal dish, a cornerstone of Jewish culture – right up there with bagels and chopped liver. And like bagels, it's one of the few Ashkenazi dishes to have infiltrated mainstream American culture. Campbell's Chicken Soup: Is that Jewish, or American? You get my drift.

Fragrant, delicious chicken soup is very easy to make – easier, I'd say, than running out to a deli to pick some up, should you happen to be in possession of a chicken, celery and carrots. In fact, if you've never made it before, once you try it, you'll wonder why it took you so long to make your own.

It goes like this: Cut up a chicken, ask the butcher to cut one up for you or buy one already cut up. The benefit of the first two are you can keep the back and neck to put in the soup -- they add lots of richness. Cover it in cold water, bring to a simmer, and skim. Add aromatic vegetables: onion, carrot and celery. My mom always added parsnip, too, so I follow suit, but it's not essential. If you skip it, add another carrot. Throw in a bunch of dill. Let it simmer an hour and a half or two hours. 

Add salt and pepper, and it's basically done. My mom always cooked fine egg noodles separately, put some in each bowl, and then strained some soup directly into each bowl, along with some carrots and celery. She would give us a plate of the chicken separately, and I shudder to think now that we often ate it with ketchup.

 I usually strain the whole soup –– reserving the chicken meat, carrots, celery and parsnip and adding them back into the clear soup. Put some cooked noodles in each bowl, and ladle it in.

My recipe includes measurements, but you don't have to measure things to make chicken soup; it's a soup made by feel. My mom never put garlic in hers, but I often do – especially if the soup is serving as Jewish penicillin; then I throw in a whole head, separated into cloves but not peeled. Sometimes I add a leek, or parsley. Have extra chicken parts in the freezer? Throw those in, for sure, and add a little more water. 

OK. That is my mom's gift to you. Wear it in good health. 

 

Roasted branzino with citrus and thyme is a snap to make

A whole roasted branzino: Doesn't that sound dreamy? And how about whole branzino roasted with sliced lemons, limes, oranges and onions, and twigs of fresh thyme? What would you think if I told you this was one of the easiest fish dishes you could possibly make – and also one of the most impressive? 

You'd say "sign me up" – am I right??!! 

OK, so first, branzino. You might know it as Mediterranean sea bass, or – its French name –  loup de mer. Some people call it branzini, which is also the plural of branzino in Italian (Italian pals, please correct me if I'm wrong!).  It's a delicately flavored fin fish with soft, white flesh – and it's surprisingly easy to cook. Even if you tried to ruin this dish, you'd probably fail. And roasting is my favorite fool-proof way to cook it. 

First, go to the store. Ask the fishmonger for whole branzini. One smallish one – about three quarters of a pound – per person is ideal. Two biggish ones are just right to serve three, which is what I used to do before the kid left for college. Ask the fishmonger to scale, gut and clean them, and snip off the pectoral fins (those are the ones on the side of the fish near the gill). If they forget to, you can do that at home -- just give them a snip with your kitchen shears or scissors. Tell the fishmonger to leave the heads and tails on, as it makes a nicer presentation. Unless you're the kind of person that can't bear to see them – then off they go. Roasting them on the bone results in the best flavor, and flesh that stays super-moist, so resist the urge to have them filleted.

OK, you've got your branzini. When you're ready to roast them, give them another rinse in the sink, focusing on the cavity. Pat them dry. 

If you're a confident cook, you don't even need a recipe for this; it's that simple.  Drizzle a little olive oil in a glass baking dish or other roasting pan. Scatter some sliced onion on the oil, then lay the fish over the onion. Season the fish inside and out with salt and pepper, tuck some fresh thyme and a few thin slices of citrus (lemon, lime and orange or any combination) inside their cavities, scatter more thyme, onion and citrus slices over them, drizzle with a little more olive oil, and roast in a 400 degree oven for about 35 minutes. 

Transfer them to a serving platter and fillet them at the table. You can be totally casual about it (as we do for family dinners), or – if you're serving them to guests (a double recipe makes a great dinner party for four) – you can fillet each, transfer to a plate, sprinkle with a few flakes of Maldon salt and freshly ground black pepper and offer a bottle of your best, fresh, fruity olive oil to drizzle over that lovely white flesh. 

What to serve with it? Some simple blanched-then-sautéed rapini or green beans, sautéed zucchini or spinach. Or start dinner with a simple arugula salad with shaved parm and good balsamic vinaigrette and follow with the fish, maybe with some roasted potatoes.

Gorgeous, fabulous and ridiculously easy to make: This autumn fruit and almond cake has it all

For years I'd been meaning to cook from one of British author Diana Henry's beautiful cookbooks, like the one she won a James Beard Award for last year, A Bird in the Hand. And so when a review copy of her new book Simple: Effortless Food, Big Flavors landed in my inbox, I seized the moment. So many of the recipes look wonderful: toast with crab and cilantro-chile mayo; Indian sweet potatoes with chickpeas and coconut; roast lamb loin fillets with a minty-almondy Sicilian sauce called zhoggiu; roast eggplants with tomatoes and saffron cream.

I know, right?

But it was a sweet from her chapter on fruit desserts that I couldn't resist making right away last month – a summer fruit and almond cake. Here's what's amazing about it: You throw all the cake ingredients into the food processor, whirr them up, pour them in the pan (an 8-inch springform pan), top them with fruit (arranged "higgledy-piddledy" – how great is that?!) and pop it in the oven. Can you imagine anything easier? The recipe calls for ripe nectarines, unripe plums and raspberries; I used blackberries instead.

It turned out great! Super-moist, with a nice crumb, lightly (but not overpoweringly) almondy, with just the right balance of fruit to cake. The fruit became lushly flavorful with that nice long stay in the oven. 

I would have happily made it every week or two, except for one thing: Summer ended.

Since we are now into early autumn, I thought the same almond cake featuring shoulder-season fruit – figs, plums and blackberries – could be fabulous, and Henry mentions in her headnote that you can swap out other fruit. I jumped on the occasion to feature some gorgeous ripe Mission figs I found in the supermarket, along with late-season plums and plump blackberries.

I gathered the ingredients: the usual flour, butter, eggs, sugar, baking powder, salt and vanilla, plus sour cream, almond extract, crumbled marzipan. Henry's recipe called for superfine sugar, which I can never find in the supermarket, so I tried regular sugar, which worked just fine. The fruit gets tossed in sugar too; I used less than Henry suggests, as ripe figs are sweeter than nectarines. 

I popped it in the oven and baked it, for a very long time – her recipe calls for an hour and a half, but mine took longer both times. Start testing it after an hour and a half; you know it's done when a wooden skewer inserted in the center comes out pretty clean (the fruit will mess it up a little; you just don't want raw cake batter on the skewer). Let it cool in the pan, then remove the ring and dust it with powdered sugar. (Pro tip: Put a spoonful of powdered sugar in a fine-mesh strainer, and use the spoon to tap the strainer on the side over the cake for a soft, even dusting.)

Crazy-good classic mac and cheese may be the most craveable comfort food in the universe

You know you want it. Chefs tell me their customers demand it all the time. When I crave a rich, cheesy, creamy macaroni and cheese, I reach for the cheddar and a bag of elbow macaroni. You don't need to buy anything fancy; no bronze-die pedigree required. For this one I used supermarket large elbow macaroni, and it could not have been better. Yup, crazy-good. (Ding! Ding! Ding!)

It's simple and luxurious, and really easy to make. Boil up and drain the macaroni till al dente. Use the same pot to sweat chopped onion in butter, sprinkle on a little flour and cook it briefly. Stir in milk and cook a few minutes to make a white sauce. Stir in grated cheese, seasonings and the mac. Turn it all into a buttered baking dish, top with bread crumbs, dot the top with butter and bake in a hot oven till golden-brown.

You can riff on the recipe, adding ham or roasted chiles or crumbled bacon or whatever, but I'm a mac and cheese purist. Sharp cheddar is the cheese of choice (with a little Parm), but you can mix that up, too, throw in some Gruyère, if you're feeling French. Go ahead: Treat yourself. You deserve it. 

When I'm in the mood to indulge, a perfect dinner is a simple arugula salad, this classic, luscious mac and cheese and a glass of red wine. Right?

Robin Ha's new 'comic book with recipes' will turn you into an awesome Korean cook

If you want to learn to cook Korean food and you're starting from scratch, the first thing to do is find a very large jar. The second is to procure a copy of Cook Korean!: A Comic Book with Recipes

The jar, which needs to be glass and very large – like 96 ounces large – is for making kimchi, which is not only delicious (and super-healthy) on its own, but also an ingredient in many Korean dishes. It's also a hugely important part of Korean culture, as this story about kimchi and South Korean "gastrodiplomacy" from NPR's the Kitchen Sisters explains.

The book, engagingly written and illustrated by Robin Ha, a graduate of Rhode Island School of Design with a BFA in illustration, makes learning this cuisine – which might otherwise be daunting if you're a first-timer – approachable and fun. That's because she uses her talents as a comic book artist to explain and illustrate techniques and walk you through the recipes. You can find some of her work on her blog, Banchan in 2 Pages, named for the assorted and multitudinous side dishes (banchan) served with a Korean meal.

But don't worry: Even if you don't want to make your own kimchi (which you can always buy), you can still jump in and turn out some terrific Korean dishes with Ha, who was born in South Korea, as your guide. If you're anything like me, you'll be hooked after making just a couple recipes. After you cook three or four, you'll even start to feel like an honest-to-goodness Korean cook. 

Are you game? Besides the book (or this blog post, with its linked recipes), you'll also need access to a few key Korean ingredients and (if you want to make kimchi) food-prep gloves. If you're lucky enough to live near a well-stocked Asian supermarket, that's easy. Pantry items, such as gochujang (Korean chile paste) and gochugaru (Korean red chile flakes) and food-prep gloves can be bought online, but you'll probably have to find refrigerated items, like the saeujeot (tiny fermented salted shrimp) used to make kimchi, in an Asian market. Nearly every recipe I tested in the book called for either gochujang or gochugaru or both. Of course if you do have access to an Asian supermarket, you'll find everything you need there – I even found boxes of disposable vinyl gloves. 

Gochugaru – Korean red chile flakes – will quickly become your best friend.

If you are up for making kimchi – which I found incredibly rewarding (I thought only God could make kimchi!) and not nearly as involved as I imagined, here's the way it starts: Gather the saeujeot, gochugaru, napa cabbage, daikon radish and fish sauce – along with a few other standard staples (and yes, that giant jar) – and you're ready to rock 'n' roll. 

Make it once, and you understand basic kimchi technique,  which is pretty cool, as there are a jillion types of kimchi.

This one, which Ha calls Easy Kimchi, is the most basic – starring napa cabbage. It starts with a quick saltwater brine of the cabbage. After a 45-minute soak, squeeze out the water, put the cabbage in a big bowl with carrots, daikon, ginger, garlic, scallions, gochugaru, saeujeot, sugar and fish sauce, then put on those gloves, use your hands to mix it all together really well, pack it in the jar and close the lid. Put the jar in a plastic bag ("in case the juice overflows during fermentation"; mine didn't) and leave it at room temperature for 24 hours. After that, it's ready to eat – but it gets better and better as it sits in the fridge, where you can leave it, says Ha, up to a month. 

Even that second day, though, it's pretty fabulous. And abundant: You'll need to make room in the fridge for that giant jarful. I gave one smaller jar of it to a kimchi-loving friend (she swooned!) and about a month after I made it, I've managed to polish it off, nearly single-handedly. Wylie and Thierry acted extremely impressed and ate it heartily for a couple of days, but left the rest to me. It's great on its own as a snack, or as a condiment with other Korean dishes. 

Not everything in the book is spicy, and not everything requires ingredients not often found in Western kitchens (though most do). I loved a super-easy recipe for bean sprout salad, a classic banchan you can make using stuff you can find at a reasonably well-stocked regular supermarket. 

For this you just boil bean sprouts, drain and squeeze out the water, then toss them with chopped scallion, minced garlic, toasted sesame oil, soy sauce and toasted sesame seeds. I garnished it with a little more sesame seed and scallion. So good!

Now I was really starting to have fun. And the timing couldn't have been better: Many of the recipes are for dishes served cold – so deliciously refreshing for a hot summer!

You may have heard that it gets pretty toasty here in Texas, and on one oven-like day when it was 105 degrees in the shade, I thought hoedupbap.  A salad and rice bowl topped with raw fish: That's the ticket. Ha calls it "one of the healthiest, tastiest and easiest dishes in Korean cuisine." OK, then! "Its tangy, spicy dressing," she writes, "is the key to tying all of the ingredients together."

Right she was, on all counts. The spicy dressing – made with Asian pear, garlic, lemon juice, gochujang (that Korean chile paste I told you about), soy sauce, rice vinegar and sugar – is similar to others in the book, all whirred together in a blender. Ha says the cooking time is 10 minutes, but that doesn't take into account that one of the ingredients is freshly cooked rice, which takes about 35, including rinsing time and letting it sit for 15 minutes. I incorporated her rice recipe into my adaptation of her hoedupbap recipe.

Once you have the dressing ready, the rice cooked, the sashimi-grade raw fish sliced and the salad ingredients prepped (Romaine lettuce, Kirby cucumber, carrot and scallions), you assemble the ingredients in each of two bowls (the recipe serves two). Rice goes on the bottom, then salad, then fish on top, garnished with tobiko (flying fish roe), crushed toasted nori (seaweed) and toasted sesame seeds. 

Add spicy sauce to taste, mix it all up and eat!

Each lucky Korean food lover adds sauce to taste, mixes it all up and enjoys. At least we did! For raw fish, I used sashimi-grade tuna I bought at our fabulous local Super H-Mart.

Next I attempted mulnaengmyun – cold buckwheat noodles. Why not? I was on a roll! 

This time, I hit some stumbling blocks. You start preparing the dish the day before you want to eat it, blanching thin-sliced brisket in salted water for about a minute.  Pull out and chill the beef, and also chill the broth. Next day, you make quick-pickled daikon and cucumber, and the pickle juice combines with the beef broth to make a pickly broth for the noodles. 

Now I had a problem: Ha said to combine 1 cup of the broth and 1 cup of the pickle juice in each of 4 bowls, but I only had 3 1/2 cups of pickle juice. So I had to tweak, using 2/3 cup of each. That was no problem; it was plenty of pickly broth. 

But once I made the spicy red chile bibim sauce, cooked the soba (buckwheat noodles), sliced the Asian pear, hard-boiled the eggs and assembled the whole thing, it just wasn't that great – especially for a two-day recipe. The biggest problem was the beef, which was tough. Oh, well.

For a final test, I thought I'd try something served hot – just in case summer eventually decides to end.

I love daikon, whether raw or cooked, and I love shiny fish, like saury (mackerel pike), so a an easy, home-style recipe that marries saury and braised daikon, plus garlic, onions, ginger and chile, sounded ideal. The dish, writes Ha, "is a good example of how Koreans use seafood in everyday meals: It's easy and inexpensive and the leftovers taste good."

Well, this one tasted so good there were no leftovers. That was a tiny issue in the recipe, actually: While I usually found the portion sizes in the book to be pretty enormous, this one, whose headnote says it serves 4 to 6, was just enough for three, as far as the fish went. (There was enough daikon for four.) 

Before I made it, I was most curious about the canned saury the recipe calls for. I'd eaten fresh grilled or smoked saury many times in Japanese restaurants, but I'd never eat (or seen!) it canned. Again, Super H-Mart to the rescue: I found at least three different brands there. How to choose?  I went for the coolest looking can. What was inside looked like oversized sardines. 

The recipe – another super-easy one – worked great. You put chunks of daikon and onion in the bottom of a pot, pour the can of saury over it (including its liquid), along with a spicy sauce you've just thrown together (gochugaru, soy sauce, sugar, garlic and ginger). Cook it 25 minutes, add scallions and cook another 3 minutes.

Ha doesn't say to serve it with rice, but that's what her comic shows, so I did. Pretty good! Wylie's friend Jack, who had rarely eaten fish in all his 19 years, tried a plate of it. I was worried that he'd be put of by the saury's assertive flavor, but he loved it. 

So, four out of five recipes tested worked great – that's a pretty impressive result. I'll certainly make the kimchi and the bean sprouts salad again, and there are a bunch more recipes I want to try. Kimchi fried rice, for instance. And rice cake soup (tteokguk), traditional for New Year's Day. I'll probably skip the Korean barbecue (I think that's probably best cooked over charcoal at a special table in a restaurant), but there's a spicy pork over rice (jeyuk dupbap) that looks good. And I'll definitely try the haemul pajean – seafood and green onion pancake, one of my favorite Korean dishes.

If I have one small caution, it would be this: While Cook Korean!'s comic-book style is a big draw, and the illustrations are terrific, the way the recipe winds around on each page can sometimes be a little disorienting.  Because of that I occasionally missed directions. For instance, the kimchi recipe calls for cutting the ginormous napa cabbage lengthwise into quarters, then cutting those quarters into bite-sized pieces. I somehow missed the part that said to make them bite-sized. The recipe worked fine anyway, though every time I eat some of the kimchi, I cut up some of it with kitchen scissors. My fault, for sure: I think I was thrown because when I went to the giant Super H-Mart in a Dallas suburb to shop for ingredients, I watched a lady making kimchi – and she was massaging the sauce into quartered heads of napa cabbage (you can see cooks doing that in the photo accompanying the NPR story, too). But it is easy to miss such details.

If you want to try one or two of my adapted versions of Ha's recipes before you spring for the book, you won't run into that problem. Sound good? I thought so! Now go cook . . . Korean!
