Recipe of the Day: Tinga de Pollo (Chicken Tinga)

“The first recipe any Mexican will cook as soon as they move out of their parents’ home and live on their own is chicken tinga.” That’s according to Enrique Olvera, Mexico’s most famous chef. He and his co-authors included their recipe for it in the “Weekday Meals” chapter of their 2019 cookbook Tu Casa Mi Casa: Mexican Recipes for the Home Cook.

They suggest serving it the first night as a soupy stew, on top of rice and accompanied by tortillas. (Sold!) On following days, you can reduce it down a bit, and use it to fill tacos (either with tortillas you make yourself or storebought ones). Or spooned onto a crisp tostada, layered with shredded lettuce, crumbled queso fresco, salsa verde and a squiggle of crema.

It’s very easy to make — hence its popularity as a recipe for new cooks. Highly recommend!

Showstopper dessert encore: Make Ottolenghi's fabulous rolled Pavlova while we still have peaches!

Looking for something fabulous and sweet to make this weekend or next? Or maybe you want something to wow a crowd during your upcoming August vacation?

Look no further: This rolled Pavlova from Sweet: Desserts from London’s Ottolenghi is absolutely smashing. Dramatic and gorgeous, it makes a hell of an impression — but it actually requires surprisingly little effort.

If you’ve never had or made a Pavlova, it’s actually quite simple: just whip egg whites with sugar until they’re thick and glossy, add a little vanilla for flavor and a touch of vinegar and cornstarch to stabilize, spread it on a parchment lined sheet pan and bake. When it comes out of the oven, it’ll be super-light, crisp and crusty on the outside and marshmallowy-soft on the inside. Round ones make great bases you can use in place of the shortcake for strawberry shortcake, or you can make a big one, dollop on whipped cream, top it with fruit and nuts and make a gorgeous statement. We’ve been doing both of those for years. Pavlovas are particularly wonderful for anyone needing or wanting to eat gluten-free.

But we’d never heard of a rolled Pavlova until we were flipping through Sweet last weekend, looking for a fruit dessert that we hoped would wow some wonderful new friends we’d invited to dinner.

And wow, did it! Not only was it a show-stopper; it was actually a show — everyone wanted to watch the dramatic roll-it-up maneuver. Then cutting the slices (thick ones! delightful crackly noise!) was its own entertaining moment.

The recipe probably reads a little scary if you’ve never made a Pavlova before — rolling a flat, crisp, thick meringue could seem perilous — but I knew it would be soft enough inside that rolling it up should be no problem. More than a show-stopper; it was actually a show — everyone wanted to watch the dramatic roll-it-up maneuver. Then cutting the slices (thick ones! delightful crackly noise!) was its own entertaining moment.

The Pavlova was dreamy to eat: Lots of ripe and super-flavorful peak-season peaches and juicy blackberries mingling with whipped cream inside the soft and crunchy meringue roulade, with more whipped cream, fruit and toasted sliced almonds on top. Our friends had brought along a delightful Muscat de Beaumes-de-Venise — one of my all-time favorite dessert wines — a glorious match, thanks to the peaches.

OK, I know what you’re thinking: Need to run out and buy peaches, blackberries, cream and eggs. Do let us know how you love it.


Crunchy, light and fun, heirloom-corn tostadas will set you free this summer

Why doesn’t everyone eat tostadas, all the time? It’s a question that nags me noon and night — especially in summertime, when the idea of something light, healthy and fresh, but also delicious and satisfying (and gluten-free!), is top of mind. Plus they’re infinitely adaptable.

What is a tostada? It’s a crisp corn tortilla topped with something appealing. It could be a cold, inviting ceviche. It might be a fresh salad with a layer of warm beans. Perhaps it’s a thatch of cool shredded lettuce topped with warm tinga de pollo. Or an irresistible spin on avocado toast. Whichever way, the tortilla underneath provides delightful crunchy contrast.

People in Mexico, where tostadas were invented, understand their terrific appeal.

And tostadas have been a thing in Southern California for ages. When I was growing up in Los Angeles, giant salady chicken tostadas layered with beans were found in just about every Mexican restaurant: the perfect lunch. My favorite version, as a young adult working in Hollywood, was conveniently located across the street from Paramount Studios, at a show-biz hangout called Lucy’s El Adobe. But you could find chicken tostadas everywhere.

More fashionable these days in the Golden State — and differently wonderful — are simpler, flatter seafood tostadas topped with things like ceviche or octopus salad. A stall in downtown L.A.’s Grand Central Market called La Tostaderia specializes in them, but they’re also found on mariscos (seafood) trucks and stands all over town.

“Places like that are all over Mexico,” says Olivia Lopez, owner of Molino Olōyō in Dallas, and Cooks Without Borders’ Mexican cuisine expert. Known as marisquerías, they are small spots selling mariscos, often arrayed on tostadas. They are popular in Colima, the coastal state where she’s from, and all along the Pacific coast. And they’re trending. “Marisquerías are expanding all over the country,” says Olivia. “It has become a trend in maybe the last 10 years.”

Bright, light, fresh and tangy, a tostada makes an irresistible lunch or snack. Dress it up a bit, and you can invite it to a special dinner. Or tostada party, which Olivia has done recently at a couple of pop-ups.

Yep — Olivia knows how to dress them up. On Molino Olōyō’s Instagram feed, you’ll find one topped with pickled cabbage, chicken in mole, homemade crema, pickled onions and salsa macha.

I fell head-over-heels in love with her Scallop Ceviche Tostada the minute I laid eyes on it, and even more when I tasted it. It’s a blue-corn tostada spread with avocado purée, topped with a bright and voluptuous scallop ceviche and drizzled with a tangy Scallion Condiment. Salsa macha is spooned around, adding depth, and crunchy toasted peanuts go on top.

It’s cheffy and gorgeous, to be sure, but surprisingly easy to achieve at home. Especially if you happen to keep a jar of Olivia’s outstanding Salsa Macha in the fridge, and you’ve made the tostada bases in advance. The scallop ceviche itself is a snap to make; it takes all of about 10 minutes.

Do try this at home

Before heirloom masa harina changed my life, I never made tostadas at home. But now that it’s remarkably easy to make outstanding corn tortillas that don’t involve GMO corn, I make them all the time. It’s a no-brainer — and no need to fry the tortillas to get the crunch. Just make a batch of tortillas, set them on a rack on a baking sheet and let them dry out and get crisp in a low oven. Alternatively, you can use leftover tortillas — simply dry them in the oven.

Then let your imagination go wild.

As a starting point, you might use avocado on top of the crisped tortilla. Olivia’s scallop ceviche creation uses avocado purée, but you could also smear some guacamole or smashed avocado on there, or dress it up like an avocado toast — pretty slices, a generous squeeze of lime, some fancy salt and a grind of black pepper or smattering of chile flakes. In full-on summer, juicy slices of heirloom tomato are a delightful addition. Cilantro leaves are always welcome.

I love the simple treat, because it really features the fabulous, deep flavor of the heirloom corn tortilla — and it’s also vegan and gluten-free.

You don’t need a recipe for it, but here’s a recipe anyway.

A Mexican home-cooking classic

If you’re a fan of Chicken Tinga (Tinga de Pollo) — an easy stew of poached chicken, tomato, onion, garlic and chipotle chile — you can do as Mexican home cooks do and make second-day Tostadas con Tinga de Pollo with the leftovers. Just spoon some reheated Chicken Tinga over a tostdada piled with shredded lettuce, garnish with crumbled queso fresco, if you like, and maybe a squiggle of crema (Mexican sour cream). Bright-flavored raw salsa verde adds tangy dimension.

Last summer, I got in the habit of keeping tostadas handy, along with the makings of pico de gallo (tomato, white onion, serrano, cilantro) and avocados, and on the weekend I’d make a pot of frijoles de olla. Using organic roast chicken picked up at the supermarket (don’t tell my kid!), I found myself making these a couple times a week. I also stared keeping cans of organic pinto beans around, in case I needed to have this and didn’t have time to make beans. (Yes, they’re that crave-able!)

This summer (which hasn’t even officially started yet) is shaping up to be a repeat.

When you make them, they look giant. The salad spills over the tortilla. You think, that’s so big — how can I possibly eat that? You can; it’s mostly lettuce. The contrast of its cool freshness with the rich, warm beans is marvelous. The avocado and chicken make it substantial. The pico de gallo makes it superbly juicy and bright.

Is there anything more festive than a molcajete filled with guacamole? As a party-starter — whether it’s a party of two or twenty — it can’t be beat.

Our friends who garden seem to all have cilantro that’s gardening at the moment, and its delicate lacy blossoms make the nicest garnish, if you can get them.

Of course you’ll need ripe avocados, which is why we’re talking about this now. Memorial Day weekend — summer’s unofficial kickoff — is just about here, and if you grab a few avocados that are not quite ripe, you can put ‘em in a paper bag and they’ll be ready to smash just when you need them.

Whether your Memorial Day festivities skew toward carne asada or burgers on the grill, or even a fabulous vegan mixed grill, you don’t need to overthink the party-starter. Haven’t made plans? Mash up some guac, tear open a bag of chips and invite a friend. See? The party’s here.

Yesterday was bittersweet. Wylie, my 24 year-old son and partner-in-cooking during The Great Confinement, finished packing up his silver Honda Fit, took one last look around to see what he left behind (inoperable culinary blowtorch, heavy suede jacket, melancholy parents) and — with his girlfriend Nathalie in the passenger seat — hit the road for California.

It’s a scene that’s been happening all across the country during recent weeks, apparently, as life begins to return to normal. Whatever that was.

The reasons for the bitter part of bittersweet are obvious. The sweet part is my feeling of gratefulness for the time we all had together — Wylie was with us during the entire pandemic.

I can’t exactly say that while Wylie was here I taught him to cook. That started long ago. He asked for a crepe pan for his birthday when he was, I think, seven. He spent the last year of his time in college in Los Angeles wowing his housemates with Santa Maria barbecues or giant pans of baked ziti.

But when he rejoined us a year and a half ago to regroup post-college and embark on a job search, he still had a lot to learn — as we all do. I’m pretty sure that’s when I taught him how to deglaze a pan, though he’ll probably dispute that. I definitely taught him to make corn tortillas and miso soup, soufflés and Chinese dumplings.

What I can say is that while he was here, Wylie grew up culinarily. Cooking nearly every meal during the year of confinement allowed both of us to fully immerse ourselves in the kitchen.

Of course for me there was (and always will be) plenty to learn as well. We both learned from cookbooks, videos and websites, along with conversations with cooks — Monish Gujral in India, who taught us about murgh makhani (butter chicken, which his grandfather invented); An-My Lê in New York, my brilliant photographer-friend and home cook who taught us about bánh xèo (sizzling crepes) and pho ga; Yuyee Sakpanichkul here in Dallas, the chef-owner of Ka-Tip, who talked me through the way to build a Thai curry.

What surprised me most in all this was how much I learned from Wylie. He’s a quick study, and when he wanted to master a dish, he dove headlong into it — watching chef videos, reading websites (always seeing what Kenji had to say at Serious Eats), consulting cookbooks. Most of what he wanted to learn was French (Thomas Keller became one of his faves) or meat-centric. (Kenji, in case your internet has been out for the last few years, is J. Kenji López-Alt; his fans call him Kenji.) Yet Wylie is seldom satisfied that his teachers have shown him the best way. He absorbs their wisdom, and then pushes forward, questioning assumptions, making improvements. (I suppose the apple doesn’t fall far from the tree; that constant tweaking and evolution is the animating ethos of Cooks Without Borders.) 

One of the most useful things I learned from Wylie is his take on roast chicken. I had taught him everything I know on the subject, beginning with the late Judy Rodgers’ method of salting the bird a day or two before you want to roast, air-drying the skin, then tucking fresh herbs between skin and flesh and roasting simply in a skillet in a very hot oven. No need to baste, but you flip it twice. The result is an exquisite bird with wonderfully crisp skin. He tried that, tried Thomas’ Keller’s wet-brine method, which he was sure would be better (it wasn’t), tried CWB’s viral rendition of Lucky Peach’s lacquered roast chicken (impressed, but he tweaked the glaze). He tried other versions, too. We invested in a stove-top rotisserie, which makes a fabulous and very easy bird, but fixing the chicken on the rotisserie axle is a bit of a headache, and the thing can only accommodate birds smaller than three pounds, which aren’t easy to find.

After a year or so of experimenting, Wylie had settled into his preferred method. He feels salting ahead of time is best, but more often than not, when we want a roast chicken, we want it right now. One day, I suggested trying to pick up a supermarket roast chicken, something Wylie’s father and I used to do all the time when I was working at an office, and Wylie scoffed. “It’s just as easy to roast our own,” he said, “and so much better.”

Wylie’s solution to lack of time to salt and air-dry is hilarious: He pats the bird dry, sets it on a rack on a sheet pan and puts the pan on the floor with a small Vornado fan pointed at it for a half hour or so. Very effective! Then he finely chops a lot of thyme, distributes it between skin and flesh (sometimes suspended in butter), seasons inside and out, puts a whole lemon in the cavity and roasts — very simply. He uses Judy Rodgers’ basic method, heating a dry skillet on the stove, then setting the bird on it breast-up (at which point it makes a terrible loud farting sound!), and immediately putting it in a very hot oven.

Unlike Rodgers, however, Wylie doesn’t flip the bird. Rodgers’ method calls for turning it breast-down after 20 minutes, then flipping it back breast-up for the last five or ten to crisp the skin back up. Wylie doesn’t believe that there’s much (if anything) to gain with the flip, and certainly not worth the risk of the breast skin tearing in the process. He wants that perfect, crisp, browned skin.

After having eaten an adulthood’s worth of Judy birds and a year’s worth of Wylie birds, I daresay he’s right.

Last night, hours after he and Nathalie drove off, I needed roast chicken. Had Wylie been here, he would have insisted on roasting the chicken himself. Instead, I channeled him, with edits. 

As I started putting it together, I realized that I finally had something I’d long been seeking: the best streamlined way to roast a chicken with minimum effort and maximum impact.

Busy all day, I hadn’t thought of taking the bird from the fridge and letting it come to room temp. No matter. I rinsed it and patted it dry, tucked some thyme under its skin and salted it inside and out. Pepper on the outside, too. I tied its ankles together, heated a skillet, plopped down that bird, and shoved it in the oven, set at 450. Our ridiculous smoke alarm went off three times (though the kitchen was not smoky), making us curse and miss Wylie. I pulled out the chicken and took its temperature in the thickest part of the thigh, which the experts always tell you to do: 190 degrees — overdone!  How was that possible after just 40 minutes?

And then a lightbulb went off, and I finally understood that the thickest-part-of-the-thigh dictum is wrong. How many times have we pulled out the bird when thickest part registered more than 165, let it rest, carved it, and found that next to the bone, it was underdone.

So instead I inserted the thermometer next to the drumstick bone: 145. Not done. Back in went the chicken for another 10 minutes, I took the temp in the same place, and got 165.

Out came the chicken to rest — resplendent in its golden-brown skin. I made a little pan-sauce, having minced a shallot finely enough to meet Wylie’s exacting standards. (I used to be sloppier.)

I carved the bird, missing Wylie’s sharp carving knife. (He built an impressive knife collection while here.) We dined, Thierry sipping a glass of rosé, me sipping fizzy water, having reclaimed our two old accustomed places at the table for dining à deux. We toasted Wylie and Nathalie — and the adventure they’d driven off into.

And the chicken? It was perfect.

Every spring, as the sun comes out, the earth warms up, and thoughts of picnics, patios and pool parties pervade, this deliciously optimistic Quinoa, Pea and Mint Tabbouleh finds its way to my table lickety-split.

From Michael Solomonov and Steven Cook’s superb 2015 book Zahav: A World of Israeli Cooking, it’s one of my favorite things to eat all the way through summer’s end.

Easy to make, and from ingredients that are not hard to find (frozen peas!), it’s super-versatile. Serve it as a starter, part of a creative mezze spread, maybe, or a simple spring dinner. Or as a side dish with lamb, chicken or fish —or even as a vegan main course. It travels well and eats great at room temp, so it’s a dreamy dish to bring to a potluck or picnic. I love it on its own for lunch — especially when it’s leftover from the night before — either on its own, or stuffed into a whole-wheat pita pocket.

Because I’m so fond it it, I make sure to keep a bag or two of those petite peas in the freezer and quinoa in the pantry all spring and summer long. That way when I see fresh mint (or my potted one is in a giving mood), I can chop it all together.

Oh, just one thing: If you’re more than one or two people, consider doubling the batch. The few times I made just a single dose, I’ve kicked myself for not making more.

Everyone knows that if you precede something fattening with something purely vegetable, fat-free, gluten-free and crunchy, the fattening thing you eat after that doesn’t count.

Taquería carrots before chicken enchiladas, rice and beans? A zero-calorie equation.

OK, maybe in our dreams.

Still, I’m always looking for something light and refreshing to nibble before an extravagant plate of pappardelle with ragù bolognese, rich and creamy mac-and-cheese or a pizza.

Since I was a kid, I always loved giardiniera — the crunchy, tangy, lightly spicy pickled vegetable condiment that would make cameo appearances in neighborhood Italian restaurants, where small dishes of it would appear on red-and-white checked tableclothes as we waited for our spaghetti and meatballs or pepperoni pizza. That was my favorite way of eating cauliflower back then, and we loved the crunchy corrugated-cut carrots and celery.

In any case, I’ve been on the lookout for jars of good giardiniera at my local Italian grocery lately, and haven’t been delighted by what I’ve found. That’s why I was excited to see a recipe for it in Alex Guarnaschelli’s new book, Cook With Me.

In fact, I’ve now made five recipes from the book, and the giardinera is by far my favorite.

It starts by soaking cut-up vegetables and garlic overnight in salt water, so you need to plan that for the day before you want to start serving it. Then you simmer up a batch of brine — white wine vinegar combined with salt and spices — let it cool slightly and pour it over the soaked-and-drained vegetables.

A couple hours later, you have giardiniera.

Guarnaschelli’s original recipe made about 6 pints, which is great if you either give most of it away or sterilize jars for long-term storage.

I like to keep things simple, so I halved her recipe. No need to sterilize; the recipe makes 3 pint-sized jars of pickled veg. For us, that’s perfect for keeping two and giving one away.

And then I’ll make it again very soon — maybe upping the serrano chile or chile flakes a bit, or adding some pepperoncini and bay leaf to the mix.

Till then, you’ll find me happily crunching away.

RECIPE: Alex Guarnaschelli’s Giardiniera

Fridge-clearing and fabulously flavorful, Sunday Souper Soup will set you up deliciously for the week

When a nation of restaurant-goers turns (almost overnight!) into a society of captive home cooks, the stresses caused by fridge management can be monumental.

Keeping everyone in comfort food is easy: There’s pasta and cheese for that. Rice concoctions galore. Potatoes are a no-brainer in any form. Pizza is a track-pad click away.

Still, you diligently keep the fridge stocked with healthy fresh things: broccoli and kale, carrots and cauliflower, Brussels sprouts, salad greens and herbs.

So that by Sunday, the crisper drawer is stuffed with stuff that’s not so crisp, and you’re left beating yourself up about waste. Meanwhile, what are you going to put on the dinner table in the coming week?

If besides all that stuff you can rustle up a few basic staples, I’ve got great news for you: You can turn those hapless refrigerator victims into a Sunday super-soup that’s so incredibly flavorful that no one would ever suspect you of anything so nefarious as using up tired greens. It’ll solve the coming week’s lunch question and provide a dinner or two — all while saving money and helping you dodge a food-waste bullet.

It gets even better: You can pack the soup with an arsenal of life-affirming, enchantingly aromatic spices and herbs that turn the whole project into an anti-inflammatory, anti-oxidant, flavonoid-rich powerhouse. It is vegan and gluten-free, and therefore sends you into the coming week feeling vital and positive. That gigantic pan of bacon-enriched mac-and-cheese you devoured on Thursday, washed down with three glasses of wine? It is vitamin water under the comfort-food bridge. Today is a new day.

The essential staples you’ll need: onions, carrots and celery (diced together they make what the French call mirepoix); lentils; a can of tomatoes; olive or other oil; salt and pepper. These, plus water, form the base of the soup. And if you follow our master recipe, that’s all you really need for a delicious one. The basic outline is sweat the mirepoix in oil, add lentils, tomatoes, water, salt and pepper, bring to a boil, reduce heat and simmer till it’s soup — under an hour.

Our master recipe — which we first wrote about pre-Covid, in a story back in January — explains how to incorporate all those vegetables crying for rescue from the fridge: everything from root vegetables (turnips, parsnips, celery root, beets) to Brassicaceae (broccoli, cauliflower, Brussels sprouts and whatnot) to fresh legumes (string beans, peas and such) to leafy greens. The veg can be raw or cooked, so that small dish of roasted cauliflower with Punjabi spices left over from Friday dinner can find a new life in a lush (and zero waste!) soup, and the lonely cupful of sautéed greens from four days ago may gain delicious new purpose.

And you’ll want to spice it up: turmeric, coriander seed and cumin seeds are great places to start; ginger and garlic are your aromatic allies; fresh and dried chiles are always welcome; nigella seeds and flax seeds add nutritional heft; so do mushrooms, dried or fresh. Herbs — fresh and dried — are superb additions.

Favorite dish of summer 2020 so far: Andrea Nguyen’s tangy, fresh, umami-ful Vietnamese rice noodle salad bowl

Cutting to the chase here: This Vietnamese rice noodle salad — from Andrea Nguyen’s new(ish) book Vietnamese Every Day — is probably the most craveable single new (to me) recipe I’ve discovered in four months of daily cooking through the pandemic. That would be my favorite dish in something like 120 days of cooking. Or at least the one dish I know I’ll come back to again and again. It’s the kind of dish you’re excited to add to your life, the kind of dish you think about and crave. The kind of dish you wake up certain days and you simply have to have.

At its base, it’s pretty basic. Put salad greens in a bowl with cilantro and mint, and maybe a handful of bean sprouts and/or some shaved cucumber. Add a layer of cold rice noodles. Then the star of the dish — grilled skewers of meat, chicken or shrimp. Tuck in some pickled daikon and carrot, scatter on toasted peanuts or cashews plus more cilantro and mint, and serve with nuoc cham, the Vietnamese dipping sauce, to toss with as dressing.

It’s cool and salad-y, with a tangy, spicy umami zap of the nuoc cham. It’s fragrant with herbs, and fresh, and cool — perfect for summer. The hot skewer lands atop cold salad and rice noodles, all those herbs and pickle, and it all gets tossed with that delicious, tangy nuoc cham sauce, plus a pickly, nutty crunch — what could be better?

We came upon the rice noodle salad recipe because Wylie was in process of preparing a Crispy Lemongrass Salmon, from the same book. Nguyen writes that while salmon is not native to Vietnam, once her family tasted it in America, they adopted it as if it were. She makes a paste with lemongrass, brown sugar, shallot, Madras-style curry powder, and fish sauce, coats salmon fillets in it, then broils them. In the headnote, she suggests serving the salmon either with rice or on top of the rice noodle salad. Wylie jumped into action, pulled together the rice noodle salad — and we were all gobsmacked.

A week later, I was craving it again, so I tried it with the pork skewers offered in Nguyen’s recipe (and which are shown on the cover of the book!).

I enjoyed putting together the marinade (garlic, shallot, five-spice powder, sugar, molasses, fish sauce, soy sauce and canola oil), and making grillable skewers out of pork shoulder — a cut I’d always thought had to be cooked long, low and slow. I couldn’t get boneless pork shoulder, but it was easy to cut bones out of a small picnic roast (a.k.a. pork butt), and slice the meat across the grain into quarter-inch-thick strips. Marinated and grilled on a cast-iron stove-top grill, the pork skewers were superb: tender, charry, flavorful, just delicious. No doubt they’d be even better grilled over charcoal.

It also seemed obvious that, as Nguyen suggests, the bowl would be fabulous topped with all kinds of alternative things. Shrimp — either marinated and grilled or poached and chilled. Chicken, with this same marinade. Beef (though I’m not usually craving beef with my salad). That’s why we’re calling our adapted version Rice Noodle Salad Bowl with XYZ Skewers.

To go vegan, you can marinate and then grill tofu and vegetables, and use that in place of the skewers.

If you’re starting from scratch, getting all the ingredients together takes some work, for sure. But you can make the key elements in advance and keep them on hand, so it comes together either in a jiff or with just a little effort, depending on the protein.

Nuoc cham base is worth keeping in the fridge (for up to two weeks); add lime and fresh chiles just before serving. Pickled daikon and carrot can be kept on hand in the fridge as well (we used a Japanese salady-pickle called Namasu, from Sonoko Sakai’s Japanese Home Cooking, since it’s so similar to the one offered in Nguyen’s book), and rice noodles boil up quick and easy. That means if you keep greens, cilantro, mint and either cucumber or bean sprouts on hand (along with roasted peanuts or cashews), and a sudden craving strikes — which it will, if you’re anything like me — you just have to think about the protein.

A super-easy alternative to Nguyen’s lemongrass salmon is fillets of Koji-Marinated Salmon. (It’s easy as long as you have shio koji (the recipe for that is included in the salmon recipe). That piece of fish — which is five minutes broiler-to-table once it has marinated a day or three in the shio koji — is awesome on that bowl. So what if it’s Japanese and the noodles are Vietnamese? It works, and it’s delicious. But honestly, any simple grilled fish or seafood would do.

OK, maybe you’re ready to get to it. Just think of the dish as a way to riff. Try it once as suggested with pork, if you’re so inclined. And then embrace it as a fabulous vehicle for whatever you feel like.

Cool as a cuke: Four cucumber-happy salads to refresh you through a hot and heavy summer

Blimey, we all need a chill pill! In the absence of an effective one, we’ve been turning to the coolest of vegetables, the cucumber.

The Oxford Companion to Food tells us that the cucumber is “one of the oldest cultivated vegetables,” that it has been grown for some 4,000 years, that it may have originated in South India and that Christopher Columbus introduced it to Haiti in 1494. Jessica B. Harris points out, however, in The Africa Cookbook, that the some scholars feel that the cucumber may have come from Central Africa.

But wait — isn’t “one of the oldest cultivated vegetables” technically a fruit?

“It is a fruit,” says my friend Tim Simmonds, a Dallas botanist — and so are squashes, both summer and winter, including pumpkins. “Same big happy family.”

The curcurbit family, that is: the vine-y plant group that also includes watermelons, chayotes, gourds, cassabananas (a.k.a. melocotón) and the kiwano (a.k.a. African horned cucumber or jelly melon).

Given the cucumber’s origin story, it’s not surprising that it is popular in India — especially in the form of raita.

The cooling cucumber salad accompanies just about any kind of Indian meal, of course. But I’ve been known to enjoy a bowl of it on its own for a soothing lunch (particularly in a pandemic!).

Ours features grated cucumber, toasted cumin and a touch of lemon juice.

A Cucumber Sunomono was literally the first recipe we test-drove for our recent review of Sonoko Sakai’s Japanese Home Cooking, since the cucumber salad is a frequent starter of Japanese meals. This one, which weaves wakame seaweed in with the cukes, sports a jaunty grated-ginger garnish. We fell in love, not surprisingly. Maybe you will, too (let us know in a comment!).

Cucumbers also make appearances in Sakai’s recipe for Potato Salada and Dallas chef Justin Holt’s Salaryman Potato Salad.

But we’re not counting those in our four, so wait, there’s more!

This pretty Cucumber, Radish and Feta Salad came together as we riffed on a Levantine dish called khiar bel na’na, starring thin-sliced cukes, dried mint and orange-blossom water. We added radishes, scallions, feta and fresh mint (which layers beautifully with the dried). Lately it has become a house favorite.

And finally, this Scandanavian Cucumber-Dill Salad — which is wonderful with poached salmon, Cold Poached Arctic Char or even Swedish meatballs.

A happy development, at least in my neck of the woods, is that organic Persian cucumbers have become more readily available, even during the pandemic. They have lovely texture (as long as they’re nice and fresh), they’re less watery than English cukes but more flavorful than most hothouse cukes, and they don’t require peeling — a win win win. Though sizes for all kinds vary, generally speaking you can figure two Persian cucumbers for one medium English cucumber, or three for a large English cuke.

As you’ll see from the above recipes, many cultures salt cucumbers and let them sit to draw out the water and ensure great texture; sometimes gentle squeezing is called for as well. Hope you enjoy these refreshing treats.

Dreaming of a Mexican beach vacation? This vibrant aguachile from Colima will (almost!) take you there

You might have to squint real hard to pretend your patio — or a picnic table at your city park — is in fact a beach in Mexico. But take a bite of this gorgeous, suave shrimp aguachile and it’s not hard to feel thousands of miles away.

In the last few years in the United States, aguachiles have eclipsed ceviches as the raw seafood treat grabbing attention; in Mexico, they’ve been popular much longer. Unlike ceviches, which involve a relatively long soak in lime juice for the raw seafood, aguachiles get just a very brief bath in serrano-spiked citrus (aguachile means water infused with chiles).

The dish was born in Mexico’s Sinaloa state, as an excellent story published last year in Eater explains. And though you find aguachiles in restaurants from Mexico City to Houston to New York City to Los Angeles using just about every type of seafood, including scallops, tuna, snapper and yellowtail, on Mexico’s west coast where they were born, they are all about shrimp. (Not from the start, though, as Michael Snyder’s Eater story explains.)

It was an aguachile that helped revive me after two and half months of confinement, when Thierry, Wylie and I ventured out to a restaurant a few weeks ago. We dined on the patio at Billy Can Can, our favorite modern Texan dining saloon (which I helped open in 2018 when I worked for the company that owns it.)

The dish was gorgeous and bright; I loved the way the dabs of avocado purée played with the lime and chile, and the shrimp had beautiful texture and flavor — unlike the rubbery, eraser-like creatures that over-soaked ceviche shrimp often become.

I asked Olivia Lopez, the restaurant’s chef de cuisine who created the dish, to tell me about it. She got a dreamy look in her eye as she started talking about making aguachile back home in Tecomán, her hometown in the state of Colima — which is about 700 miles south of the part of Sinaloa where aguachile was born. Her friend Nayely would make it, and they’d take it to the beach, where they’d enjoy it, with toastadas, along with coconut water or beers.

Colima is one of the most important lime-growing states in Mexico, she told me (the other is Michoacán), and on the road from their home in Tecomán to Playa El Real, “all you see are lime trees and palm trees. And a lot of lizards.”

For Billy Can Can’s aguachile, Lopez blanches the shrimp before their lime-serrano soak, as her customers don’t love the idea of raw shrimp, she says. To compensate for that and prevent over “cooking” from lime, she adds olive oil to the sauce.

We were thrilled when she generously offered to share her recipe with Cooks Without Borders. But could we have it the raw shrimp way, just as Lopez makes it for herself at home — the way her friend Nayely did in Tecomán? Lopez was happy to oblige.

Happily, it’s very easy to do. And it’s so spectacularly delicious that we will be making it frequently — as frequently as we dream of a beach vacation in Mexico, which is to say constantly.

In our version, raw, butterflied shrimp get a quick 10-minute dunk in lime juice with a little salt and a splash of Worcestershire sauce. (“Yes, they use that in Mexico!” Lopez says.) The marinating juice then gets puréed with serrano chiles, cilantro and avocado, and the beautiful, emerald-green sauce that results gets tumbled with the shrimp. Transfer it to a platter, dress it up with sliced cucumber, avocado and red onion, and Playa El Real is yours. You can find tostadas in a Latin-American supermarket, and probably young coconuts for coconut water as well.

One small detail: The aguachile is meant to be eaten immediately, so the shrimp doesn’t get overcooked in the lime. It did take Lopez and her friends a few minutes to get to the beach with it, but that’s OK, she says; you just want to be sure to eat it within an hour.

Honestly, once you behold that gorgeous dish you’ve made in your own kitchen, I don’t think you could wait that long.

Say hello to the green gazpacho of your dreams

There are a grillion versions of green gazpacho out there — many of them likeable, some (like Yotam Ottolenghi’s in Plenty) lovable. But I’ve never found one that made me stop and say, OK, you are the green gazpacho of my dreams.

I enjoy versions with yogurt, but the green gazpacho of my dreams is vegan. And even though a gazpacho without bread is technically not a gazpacho, the green gazpacho of my dreams is gluten-free. That’s because when I crave green gazpacho, I’m craving something very clean and pure. I’m wanting something intensely chlorophyllic, and herbal — but also tangy.

The green gazpacho of my dreams is something I can throw together in a flash, as a satisfying and energizing lunch, or a refreshing prelude to a lovely summer or late spring dinner. It should be basic enough to make for myself and family on a weekday, but gorgeous enough to start off a celebratory dinner party with friends (if we are ever able to do that again!).

It has to have body, and a little richness. I’ve seen recipes for versions involving avocado, but I’m nor looking for that kind of unctuousness. (Though I do adore diced ripe avocado as a garnish on classic Gazpacho Sevillano.)

Sometimes the way out of a culinary conundrum like this is to go back to the basics. I looked to traditional ajo blanco, the cold almond and garlic soup from Malaga, Spain that’s also known as gazpacho blanco, white gazpacho.

Yes! Raw almonds add just the right body to this soup, without the tannic bite that’s so nice with the walnuts in Ottolenghi’s Plenty version. If almonds work here, perhaps raw cashews would as well. I tried that on round two, and liked it even better — it imparted a little more roundness and depth. But either works great.

You’ll want to use your best sherry vinegar and olive oil in this soup; they are more than just supporting players.

Here is your ticket to summer-long green greatness:

As you can see in the recipe, the ingredients are basic, easy to keep on hand for when a craving comes knocking. No need for advance planning, as you don’t need to chill it; just plop two or three ice cubes in each bowl before you serve. Or make it ahead, and chill it in the fridge. For maximum delight, garnish it with a flurry of soft herbs — any combination of dill, chervil, parsley, cilantro, basil, mint, chives, tarragon, celery leaves and sliced scallion greens (OK, those last two are not technically herbs, but you get the idea). Or just add a swirl of your best olive oil on top.

RECIPE: The Greenest Gazpacho

This refreshingly minty Levantine-style salad is missing a key ingredient — that's why we call it 'fattoush-ish'

Fans of fattoush — the bread and herb salad that’s popular through the Levant year-round — are divided about how toasted pita, a key ingredient, should play in the bowl. Traditionalists like the pita soaked in the salad’s lemon, olive oil and sumac dressing so it’s soft, like the soaky bread in a traditional Tuscan bread salad. Modernists add shards of well-toasted pita at the last second, for a crisp crunch.

Traditionally eaten at iftar, the evening meal that breaks the fast during every night during Ramadan, fattoush is delightfully light and refreshing. It’s a salad to riff on. Some cooks insist it must include purslane, the tangy salad herb that grows like a weed in the Mediterranean. (Stateside, you can often find purslane in Middle-Eastern or Mexican groceries.) Some versions of fattoush include green bell pepper; others don’t. Occasionally you see radishes. You can use scallions or onions, cherry tomatoes or regular ones, romaine or arugula, or both. Some versions go light on sumac, a bright-flavored, lemony spice; others play it up big. (Our recipe takes the middle sumac path.)

If you’re not already familiar with fattoush, it’s a great time to get to know it. Once you’re in possession of a jar of dried sumac and some dried mint (we favor spearmint), you might even be able to pull it together with ingredients on hand.

Craving fattoush’s minty, sumac-y, scallion-y flavors, I had everything but pita. (One of the challenges of The Great Confinement is not having all the ingredients required for culturally correct renditions of dishes.) I went ahead with the fattoush program anyway — and way glad I did.

Leave out the pita bread, as our recipe does, and suddenly you’ve got a delightful salad that satisfies anyone avoiding carbs: It’s gluten-free and paleo-friendly. It’s also just the thing to counterbalance all that heavy comfort food many of us find ourselves indulging in more often than usual. (Start dinner with fattoush-ish, and that giant plate of lasagna doesn’t count!)

Or go ahead and add some pita: One piece, split in half and each saucer-shape crisply toasted, makes it legit. Break the two toasted sides into bite-sized pieces before adding to the salad. Traditionalists, please double the dressing and toss the pita shards in half of it a few minutes before you’ll serve the salad. Modernists, add the shards at the very last minute.

Outrageously luscious comfort from your pantry: Hello, huevos rancheros!

Huevos rancheros is the opposite of a salad. It’s warm, and saucy. It’s rich and spicy and comforting. With everything we’re all going through these days, you deserve to have it for lunch — even in the middle of the week.

Does the steaming, rich, gooey extravaganza seem like something that can only be had in a restaurant? It’s not! It’s actually super easy to make at home.

I wouldn’t be at all surprised if you had everything you need to make it already in your kitchen:

• Corn tortilla

• Eggs — or even a single egg

• A can of diced tomatoes

• One of those tiny cans of diced green chiles

• Half an onion

• Two or three garlic cloves

Maybe you don’t have garlic cloves, but you have some garlic powder. Maybe you don’t have that little can of green chiles, but you have some red pepper flakes or Tabasco. Maybe you don’t have corn tortillas, but you have masa harina and you know your way around a tortilla press. You’ll manage. I’ll walk you through it.

Probably you do have salt and cooking oil of some sort. Queso fresco or cotija — or even feta or goat cheese or one of those bags of pre-grated fiesta mix? I’m sure you’ve got one the above. Cilantro? Yes! Totally not essential, but lovely if you have it.

If you have a can of pinto beans (or some dried ones and you put up a pot first thing in the morning), you can have dreamy side dish, too. Or maybe you have black beans. But don’t even worry if you don’t: Your belly and your soul will be in a very happy place when the noon-time whistle blows.

Here’s how to achieve the lunch that we all absolutely deserve.

First, toss together a ranchera sauce: blitz a can of diced tomatoes with some diced green chiles from a can and two or three garlic cloves. Set it aside. In a saucepan, sweat half an onion, then add the purée and salt. Simmer five minutes. Taste it: Wow. Sauce whipped up from cans has no right to be that good!

Lightly fry a tortilla or two. Blot and put ‘em on a plate. Fry an egg or two in your tortilla oil, any way you like ‘em — over-easy, sunny-side-up. Slide the egg onto the tortilla, spoon ranchera sauce over. Garnish with whatever you’ve got — crumbled cotija or cheese from a bag, a fresh sprig of cilantro or two.

Don’t you wish you had a ripe avocado? Man, I actually had one and forgot I did. A few slices on the side would have been awesome. (Still kicking myself!)

You’ve already heated up that can of pinto beans or refried beans. Spoon that next to the eggs.

Got it? Here’s the recipe:

If you want to make pinto beans, wash a pound of dried pinto beans, place them in a large pot, add 10 cups of hot water and half an onion, sliced, and bring it to a boil over high heat. Reduce heat to very low, cover the pot, and cook — stirring occasionally — till the beans are tender. It might take anywhere from 90 minutes to 2 1/2 hours, depending on the beans. Add more hot water as you go along if they need it toward the end (you want it very liquidy). 10 minutes before you want to eat them, stir in salt to taste. That’s the basic recipe; throwing in some garlic and herbs (thyme, bay leaf) in the beginning is lovely too.

If it’s only huevos rancheros that you’re after, you can put that together in twenty minutes. Is it a date?

Stodgy boomer, plucky Gen-Z-er share in unlikely Instant Pot epiphany; miraculous chicken chile verde results

A few weeks ago, Wylie chicken-shamed me. 

Maybe you know the drill: following a long day at the office, you stop at the supermarket on your way home and pick up a roast chicken. I was about to do just that, and texted home to see if I should pick up anything else. 

“Just buy a raw chicken,” said Wylie, who is temporarily living with us post-college-graduation in a figuring-things-out moment. “I’ll roast it. It’ll be so much better, and it’s so easy.” Who could argue?

While the hunt for a job in his field has not been thus far fruitful, he has taken full advantage of the parental larder — and our delight at being cooked for  — in order to develop his kitchencraft.

Like many fledgling cooks of his generation, Wylie really gets into cooking projects — the more elaborate the better. The most gleeful I’ve seen him since graduation was when we spent two days making tagliatelle al ragù della vecchia scuola from Evan Funke’s American Sfoglino cookbook — a process which started with putting various meats through a manual meat grinder for the ragù, and passing simmered tomatoes through a food mill. (My favorite line in the recipe: “Begin tasting for tenderness and seasoning after 5 hours.”) We used a rolling pin to roll the pasta dough, and a knife to cut it; Funke’s philosophy is summed up in his hashtag #fuckyourpastamachine. 

And so, when through a curious set of circumstances I brought a shiny new Instant Pot — one of those countertop pressure cookers — into the house, he regarded the thing with contempt.

Not that I blame him; it’s the way he was raised. But for reasons having to do with my consulting business, I wanted to explore the possibilities. And if by some miracle I took to the thing, well, maybe it would lead to fewer supermarket roast chicken situations post work-days.

Because precise timing is involved, and the thing was utterly foreign to me, I couldn’t just dive in and start improvising; I had to learn the basics first. I went to a couple of admired and reliable sources: New York Times Cooking and Serious Eats. 

It was at the latter that I turned up a recipe that looked so implausible I couldn’t wait to try it: J. Kenji López-Alt’s Easy Pressure Cooker Green Chili with Chicken. In other words, chicken chile verde. 

I couldn’t wait to show Wylie, who naturally scoffed. The recipe would have us believe that you could throw raw chicken thighs, onion, garlic, tomatillos, spices and chiles into the vessel, push a button and (once the machine came to pressure) 15 minutes later you’d have something gorgeous and profoundly delicious. 

First time around Wylie insisted on browning the chicken thighs on top of the stove first. So we tried it like that. Then we tried it exactly as written. Then we tried it giving the poblano, Anaheim and serrano chiles, along with the onion, garlic and tomatillos, a quick char on a comal, as you would in a traditional chile verde recipe.

I’m here to tell you it was very good each and every time. We served it once with home-made corn tortillas (fantastic!), with handmade tortillas picked up from a nearby Mexican restaurant when we were out of masa harina and couldn’t find any nearby (also fantastic) and with corn tortillas we bought at Trader Joe’s and reheated in the microwave (even that was pretty good).

  • We stirred a couple tablespoonfuls of masa harina (a traditional thickener for these types of braises) into the finished dish: perfect! 

  • We also added an optional garnish of crumbled queso blanco, which rounds out the flavors beautifully; if you’re wrapping the chile verde into tacos, some crumbled queso blanco added in each one is lovely.

What of our various other attempts at improvements? 

  • Because the Instant Pot is all about ease, our recipe uses boneless, skinless chicken thighs instead of using skin-on, bone-in thighs and then removing skin and bones (if the dish lost any depth of flavor as a result of not cooking with the bones, I couldn’t detect it). 

  • Browning the chicken, however, did not noticeably improve the dish, so we jettisoned that step. 

  • Charring the chiles and garlic cloves (in their skins) adds slight value — a subtle charry, roasty flavor — do that only if you feel like it and have an extra few minutes (meanwhile, it’s easier to seed charred chiles than raw). 

  • Don’t bother charring the onion or tomatillos because the charry payoff is less, and it’s a little messier.

Though our version of the recipe — which we call Chicken Chile Verde (Quick and Easy Pressure-Cooking Version) — calls for boneless, skinless thighs, of course you can also use bone-in, skin-on thighs as the original recipe suggests, simply removing the bones and skin before shredding the chicken. Also, for whatever it’s worth, one time I forgot to buy Anaheim chiles, and so just made it with poblanos — and there wasn’t much of a difference in flavor.

OK, then — a quick walk through. The only active time it takes to speak of is prepping the onion, chiles and tomatillos, which get husked and quartered; the chiles are seeded then roughly chopped, like the onion. (If you’re going to char the chiles, you’d do that before seeding and chopping, and you can toss the garlic cloves in their skins on the skillet, comal or griddle to char as well.) Toast a tablespoon of cumin seeds in a small pan till fragrant. Set the pressure cooker to SAUTE, and toss in all of those things, along with three pounds of boneless, skinless chicken thighs and a pinch of salt. Once it sizzles a bit, seal the pressure cooker and cook on HIGH PRESSURE for 15 minutes. Release the steam, remove the chicken and shred it. Add López-Alt’s brilliant secret ingredient (Asian fish sauce!), along with salt to taste and a handful of cilantro, blitz the sauce — either with an immersion blender or in a regular blender or food processor — then stir in a couple tablespoons of masa harina. Shred the chicken and return it to the sauce. Garnish with more cilantro, and (if you like) some crumbled queso blanco. Serve it with warm corn tortillas and maybe some limes and more crumbled queso blanco.

It sort of feels like escarole is having a moment — at least if the latest salad addition to the offerings at Billy Can Can, one of our favorite restaurants in Dallas, is any indication. There, executive chef Matt Ford recently introduced a delicious grilled escarole wedge with delicata squash, honeycrisp apple, pepitas and blue cheese to his modern Texas menu.

Escarole’s not a winter green that reliably turns up at the supermarket, but when it does, and when it looks good, we grab it. Especially in winter, when you never know whether you’ll find frisée or endives or radicchio (or none of the above), creating a salad around what’s available and looking great is sound policy.

The inspiration for this particular salad comes from another Dallas restaurant, Sprezza, where we swooned over the combination of lemon, prosciutto, bitter greens, rich egg and shaved parm a couple years ago. Last night the salad was the perfect lead-off to roast lamb with root vegetables; some kind of succulent braised pork, or crispy chicken thighs with fennel would be killer on its heels, too. For a simpler vibe, you could just as happily follow it with a simple pasta (like spaghetti aglio e olio) or even a pizza delivered to your doorstep. (To be perfectly honest, though, we can totally see just having the salad for dinner with a glass of Italian white, maybe a Roero or a Pecorino.)

While intensely cravable and satisfying, the escarole salad is simple to put together and forgiving, just the ingredients mentioned above tossed in lemon juice and olive oil with some lemon zest, a squeeze of anchovy paste for extra umami and lots of black pepper. You can follow it faithfully or play with it, adding or subtracting eggs, prosciutto and parm depending on the richness and saltiness you’re after. Ready then? Here you go.

In a different winter mood, when brainstorming what to serve as an appetizer for a special evening with friends during the holiday season, we often find ourselves reaching for some combination of winter greens (whether it’s Belgian endives, frisée, curly endive or escarole), a crustacean (crab or shrimp) or smoked fish (usually trout) and radishes. After that, depending on whim and what we find, we might add avocado or celery leaves or stalks, maybe snip in a few chives, grate some Meyer lemon zest — even toss in some tobiko (flying fish roe), for that delightful little pop in the teeth.

These kind of salad never fails to deliver and delight; it always feels light, elegant and festive. And again, it’s easy to put together.

Here’s a pretty basic version — endives, radish, celery and crab meat — to use as is, or as a road map. And a pro tip: If you swap out smoked trout for the crab meat, you can usually pick up everything you need at Trader Joe’s.

One of the best parts of visiting my hometown, L.A., is dinner or lunch at my friend Michalene's. I've mentioned Michalene – or Mikie, as her family and a few close friends call her – in many posts. It was Mikie, for instance, who wondered, after a recipe for Chinese lacquered roast chicken changed my life, what would happen if I adapted it to duck. (Answer: more life-changingly delectable fowl play.) 

I met Mikie in 2003, when she was Food Editor at the Los Angeles Times, but I'd long been a fan. Before arriving at the Times a couple years earlier, she'd been Dining Editor at the New York Times, producing the Dining section that quickly, under her tenure, became a must-read. I hadn't realized I wanted to work at a newspaper – in fact I thought I didn't. But the minute I met Michalene, who invited me for a drink to discuss the possibility of my coming on board as her deputy editor, and she talked so excitedly about her love for cooking, and eating out, and editing and writing and putting together a food section, I knew I had to give it a go. 

Before long, we became not just co-workers, but fast friends. That meant we cooked and dined together often. It's one of the things I miss most about living in L.A.

So, dining at Mikie's. There are lots of great things about it. Hanging out with Mikie, and her partner Dan (who happens to be an amazing cook, too, and an awesome bread baker). They have an spectacular view of the ocean, over their rows of vineyards, from their house in the Malibu hills, so dinner's often on the patio. They are warm, generous, thoughtful and altogether brilliant hosts. 

 

I always secretly hope, as I drive up Pacific Coast Highway toward their place in Corral Canyon, that Mikie will have made her fabulous marinated olives: They're just so much better than any other olives anywhere, perfumed with orange and herbs, and spiced just so – a dreamy pre-main-event nibble.

A couple weeks ago, with friends coming to a dinner with a Spanish theme, I thought, as I tried to figure out the tapas y pinxtos, hey – why don't I make Mikie's olives? I texted her, asking for the recipe, and she told me it's from Mark Bittman's How to Cook Everything. – just tweaked a little. She adds orange zest, she tole me, and fennel seed. And she uses more vinegar than Bittman does, and less olive oil. Oh, and her technique is slightly different.

In other words, Mikie has made the olives her own. Honestly, I think it's the orange zest and fennel that knock them out of the park. 

How good are they? Well, I spent all day cooking to prepare for that dinner. I made bandilleros – all kinds of pickly and cured treats, prettily skwered. And some really nice tapas – piquillo peppers filled with brandade. And grilled asparagus with Serrano ham. And seafood paella. (OK, I blew the paella, if truth be told. Overcooked it terribly. Don't tell anyone.) Want to know what got the most applause? Mikie's olives. 

They take all of about five minutes to put together: It's just assorted olives (I like to use Castelvetranos, Picholines, Niçoises, Cerignolas and anything else that looks great – with pits), plus a few smashed garlic cloves, bay leaves, thyme branches, red pepper flakes, fennel seeds, orange zest, olive oil and red wine vinegar. Combine it all, and let it sit on the counter all afternoon – or even just an hour. Give it a toss with a spoon every now and then. That's it.

Mini strawberry Pavlovas may be the most brilliant Passover dessert ever

If ever there was a dessert meant for Passover, it's this one: mini strawberry Pavlovas. 

So, what's a Pavlova, anyway?

It's an Australian dessert named for the Russian ballerina Anna Pavlova (so the story goes), following one of her tours through Australia. Traditionally it's a large, thick meringue disk – hard and crisp on the outside, soft and pillowy on the inside – topped with whipped cream and berries or other fruit. Made this way, it's sliced into wedges to serve. 

Sized individually, mini Pavlovas are just as impressive, not to mention great for entertaining as they're so easy to make and serve. 

Why are mini Pavlovas so brilliant for Passover?

Let me count the ways:

1. There's no flour, making the dessert welcome at the Passover table.

2. They star strawberries, just as the fruit comes into the full flush of its season. 

3. They're beautiful and impressive-looking, yet easy and fool-proof to make.

4. You can make their meringue bases ahead of time – even the day before – and cut and macerate the berries in advance. All that's left to do last-minute is whip cream and assemble the Pavlovas, which is no harder than assembling strawberry shortcake. They're easy enough to manage during the craziness of a seder. 

Pavlovas aren't just for Passover

Pavlovas are having a moment in restaurants – at least here in Dallas, where one of the city's top pastry chefs, Keith Cedotal, is turning out beautiful individually sized versions, filled with citrus mousse and mixed berries, at fashionable Mirador restaurant. 

Besides being chic and delicious, Pavlovas also happen to be gluten-free – just the thing for gluten-intolerant berry lovers who are accustomed to passing up the strawberry shortcake. 

When I say Pavlovas are easy to make, I'm not kidding. All you do is whip up some egg whites, beat in sugar and, if you like, a touch of lemon or orange liqueur. If you want to get fancy, add some lemon zest. Spoon them into messy circles on a parchment-lined baking sheet and bake for less than an hour, till they're light golden and hard to the touch. 

Layer them with whipped cream and strawberries (macerated in a touch of lemon liqueur or orange liqueur if you like), and there you are. If they're messy, or the meringues break that's OK – disheveled is part of their charm.

What to make for Super Bowl Sunday: a big ol' pot of crazy-good Texas chili

A lot of people I know are really, really upset. Why? Because the Dallas Cowboys did not go all the way to the you-know-what.

Here's what I think they should do on Sunday, February 5: Make a big pot of Texas chili, turn on the TV, and pretend it's the Cowboys playing in the Super Bowl.

Why not? As long as they have something deliciously Texan to eat, that's the important thing. Right? After all, they're probably going to watch the Super Bowl. And the Super Bowl is, after all, in Texas this year. So chili is the thing. Maybe you want to make some guacamole, too (it wouldn't be the first time).

But back to the chili: Beans need not apply. Because we are in Texas, y'all. It's all about the meat. You can make a pot of pinto beans and serve it on the side, if that's your fancy. Just soak the beans overnight, drain them, place them in a big pot, cover with water by an inch, add an onion (cut in half), a bay leaf or two, a few whole garlic cloves (you don't even need to peel them), and (this is optional), a piece of slab bacon. Bring to a boil, then simmer a couple hours, till the beans are nice and tender.

But I digress.

Here's the way I feel about chili: You could use an "easy" recipe. You know, one that uses chili powder and ground beef. But as far as I'm concerned, there's nothing like chili made the old fashioned way: by soaking whole dried chiles and grinding them to a paste. I also prefer to chop the beef roughly by hand rather than using ground beef. 

Start with the right cut, not something lean: I like a well-marbled piece of chuck. Enlist your butcher's help with this. Then use a sharp knife to cut it into 1/2-inch dice.

Then you'll toast a bunch of dried ancho chiles in a dry pan, cover them with boiling water and let 'em soak. Half an hour later, purée them with a little of the soaking water to a lovely smooth, thick paste. Brown the meat, cover it with the purée and stir together.

Isn't that lovely? This is why cooks love to cook. 

Add some of the liquid from soaking the chiles, some garlic cloves and onion you've charred in the dry pan then chopped, freshly ground toasted cumin seeds, dried oregano, a couple of bay leaves and cayenne for heat.

Simmer it all together for a couple of hours: The beef will become incredibly tender and all those wonderful flavors will meld and deepen. In other words, it cooks down into crazy-good Texas chili.

Just the thing for watching (or not watching!) a hugely important football game in Texas. Let everyone serve themselves out of the pot. Put out bowls of chopped onion and grated cheese as garnish. Feel like making cornbread, or corn tortillas? That will go great – as will guacamole and chips. And beer.
