Mexican Cuisine can be thought of as a collection of regional cuisines, all united by reliance on corn (maíz), beans and chiles. It’s quite a bit more sophisticated, fresh and interesting than Tex-Mex, which is more familiar to many Americans and others; Tex-Mex is more like a cousin that’s been exported around the world.
