Bastille Day cooking made easy: How to conjure a rustic, fabulous French summer feast

Because I'm almost French (I've been married to a Frenchman for almost 22 years; one of these days I'll get around to applying for French citizenship), I love to celebrate Bastille Day. Going to a restaurant isn't usually what I feel like doing, partly because there aren't many good French restaurants in Dallas, where we live.

Referred to in France as le Quatorze Juillet, or la Fête Nationale, or la Fêt' Nat – never Bastille Day – the holiday rarely falls on a weekend, which creates a quandary: How to pull together something deliciously French after working all day?

This year, I think I found the answer: Make it rustic and easy, prepare a couple things the night before, invite friends over after work and light up the grill.

Laid-back apps – like marinated olives, asparagus vinaigrette, a freeform savory tart, maybe a saucisson or some store-bought pâté with baguette toasts – are totally festive with glasses of rosé, chilled Lillet garnished with orange slices, or (my favorite!) Ricard. 

Or hey – why not pour a pet nat, since it rhymes with Fêt' Nat! What's a pet nat? It's short for pétillant naturel – the natural sparkling wines, often from France, that are hugely popular in wine circles these days. (If you're new to the natural wine phenom, here's an excellent article, co-authored by my friend Michalene, explaining it.) 

Flipping through award-winning cookbook author Georgeanne Brennan's beautiful new book, La Vie Rustic: Cooking & Living in the French Style, I found plenty of delicious-looking inspiration, starting with her super-easy recipe for smoked trout pâté. 

Honestly, it couldn't be easier: You just mash together smoked trout with crème fraîche, lemon zest, chopped tarragon and one or two other things, pack it in a crock and that's it. While you can make it just before serving (in no time flat), it's the perfect thing to mix up the previous evening and let chill in the fridge. Serve it with Belgian endive leaves and crackers or toasts. Brennan writes in her book that it also works well with smoked salmon – something I'll be trying soon (with dill or fennel leaves, probably!). 

Also inspired by Brennan's book, I've lately become addicted to grilled artichokes. But while Brennan serves them with a yogurt-and-mayo-based herb dip (which also looks really good), I've been pairing mine with garlicky aïoli, one of my favorite substances in the world. This summer I can't get enough of it.

The artichokes can be mostly prepared the night before, as well – boil them, trim out their chokes, stash them in the fridge and make the aïoli (which probably even gets better as it sits overnight; the garlic mellows). When you're ready to serve them, just brush the artichoke halves with a little olive oil and plop them on the grill – along with halved lemons as a squeezable garnish, if you like.

For a main course, you can keep it super simple: Throw some duck breasts or a butterflied leg of lamb on the grill. You can even pick up a roast chicken (very French!) or two at the supermarket; serve it with Dijon mustard and cornichons, and French side dishes. You can blanch some haricots verts, for instance, and toss them with a little red wine vinegar, your best olive oil and some minced shallots; finish with fleur de sel and lots of freshly ground black pepper. 

Or make a warm French lentil salad – which you can either toss together in less than a half hour and serve warm, or prepare the night before and serve room temp.

Or, you know what? You can even do without a main course altogether, and just serve a bunch of delicious nibbles – French wine-bar-style. 

For dessert, there are lots of possibilities. One of the easiest is also one of the most delicious: a berry and peach crisp. Put the almond topping together the night before, and it's very quick to put together and throw in the oven. Top it with whipped cream, or crème fraîche (you should have some left over from the smoked trout pâté), or a combo. Or serve it with vanilla ice cream. 

Otherwise, if you make pastry cream the night before, you can put together a quick and easy berry tart – with the colors of the French flag!

Alternatively, you could make a chocolate mousse or pôt de crème the night before (yikes - I need to create some chocolate French recipes for the site – will do that soon!) Or play hooky from work and make a gorgeous stone-fruit tart. Or make profiterôles – cream puffs filled with ice cream and drizzled with chocolate sauce. That's another easy recipe I'll put together soon.

You could also do what so many French people do – pick up something lovely at the bakery.

Or take a tip from my French relatives, and slice up a ripe peach into the glass of red wine you've been sipping. It can't get any easier – or more delicious – than that.

Effortless summer baking: The (life-changing!) joy of frozen puff pastry

How much fun can a (relative sane) person have with a box of frozen puff pastry? Quite a lot, as it turns out.

I spent most of my adult life avoiding puff pastry. Well, I'm always happy to eat it, but make it? Not so much. I made it from scratch exactly once, a hundred years ago; that was enough. I'm not the type of person to spend endless hours rolling out layers of dough and butter and chilling it and waiting and rolling, etc. etc.

Until very recently, it never occurred to me that there were good brands of pre-made frozen puff pastry made with actual butter rather than hydrogenated vegetable oils.

Some months ago, I happened upon a box of frozen puff pastry in the freezer case at Trader Joe's that boasted an all-butter situation, snapped it up, stuck it in my freezer and nearly forgot about it. Then, when I was visiting friends in London last month, my dear friend Jenni’s wonderful sister Alison invited us for dinner. It one of these off-the-cuff affairs for 20 or so. What I love about the way these girls entertain is that they don't stress (even when 20 people are coming!); they don't worry if everything's not ready when people start arriving. Sometimes Jenni doesn't even start cooking until people start walking in the door! She and Alison understand that the important thing is to hang out with friends and family, and whatever winds up on the table will be delicious just because. 

They also happen to have some very good ideas up their sleeves. On this particular evening – a regular weekly Friday night dinner with extended family and friends – Alison pulled a savory tart out of the oven, placed it on a table out in the garden, and wheeled a pizza cutter through it to slice it into hors d'oeuvre bites.

The thing looked so delicious, I was mesmerized. Free-form, golden-crusted, beautifully messy, it was strewn with greens and mushrooms and slices of some kind of marvelous-looking washed-rind cheese melted into it. It was even more delicious than it looked – some kind of serious umami savory action on that perfect, flaky crust. I stayed there, parked next to it, trying with all my might not to eat piece after piece until it was demolished.

After showering her with compliments, I asked how she made it. "Frozen puff pastry!" she said. "All butter."

That was then (about a month ago). Now, four savory tarts, three fruit tarts and a set of cheese straws later, I can't imagine life without a box of the stuff in my freezer. At. All. Times.

So far, I have found three brands. Perhaps there are more out there. Both the Trader Joe's and the Dufour Pastry Kitchens' brands are far superior to the Pepperidge Farms non-butter frozen puff pastry I used to use occasionally in the past (that's the one with the hydrogenated vegetable oil; it also includes high-fructose corn syrup). The Dufour Pastry Kitchens classic puff pastry contains only butter, unbleached unbromated flour, water, salt and lemon juice. It's not inexpensive: I paid $10.99 for a 14-ounce box at my local Whole Foods Market and $10.49 for a box at my local Central Market. The Trader Joe's pastry was nearly as flaky and delicious, and much less expensive: $3.99 for an 18-ounce box. The Dufour brand is one single large rectangle, which comes folded; the Trader Joe's brand is two rectangular pieces, wrapped separately, which is nice (you can defrost one at a time); they come rolled.

Just one problem with the Trader Joe's brand: According to a clerk at my local store, the chain only sells it during the last quarter of the year, presumably for fall and holiday baking. So unless you keep a box in your freezer for more than six months, you can forget about it for summer baking. (Mr. Joe, please change your policy! If you do, I'll make you a summer tart!)

A third brand, White Toque, was $12.99 for a one-pound box at Whole Foods, but this brand is two rounds – which struck me as less wonderful for a savory tart to cut in small rectangles to eat as pre-dinner nibbles, but very nice for a fruit tart. The White Toque brand – which I've only spotted once – did not rise as high as either the Dufour or Trader Joe's brand, but it's possible it was because my refrigerator died, and after defrosting it sat in a less-than-optimal temperature for more than a few hours. I will give it another try next time I find it. Still, it worked just fine for a cherry-plum tart that I will blog about soon.

First I need to tell you the two ways all-butter frozen puff pastry has changed my life (and no, I'm not exaggerating). 

The first is the savory tart. I managed to approximate Alison's, although Alison used a really nice aged washed-rind goat cheese on hers, and I haven't been able to find anything like it 'round these parts.

But the great news is once you grasp how to put one of these tarts together, you can make one out of just about any kind of summer veg. The general idea is this: Thaw the pastry, unwrap it, and fold up the edges to make a rim, painting a little egg wash on them if you want glossy look. Make a filling of sautéed veg, add a couple of eggs beaten with a little cream or half and half, and either put some grated or crumbled cheese in the egg (feta, goat cheese, cheddar, etc.) or strew crumbled feta or goat cheese on top. Pop it in the oven. So easy.

 

You can riff on it endlessly, changing up the cheese or the sautéed veg, adding sliced fresh or chopped sun-dried tomatoes. It always turns out great, even if you're in such a hurry that you make a terrible mess of it – as I did with a zucchini, tomato and okra version in which I used too much egg and had a sloppy a edge, so egg spilled out all over the parchment.

It was still pretty fabulous. (For that one I sliced the okra in half vertically and grilled them before laying them atop the tart, along with sliced fresh tomatoes, before popping it in  the oven.)

The point is, these savories are so easy and impressive that they have already become a go-to appetizer for me for laid-back summer entertaining. A glass of rosé, a slice of savory tart – who needs anything else?

OK, here's the other way in which all-butter frozen puff pastry changed my life: They are brilliant to use for summer fruit tarts, including those that star unbaked fruit, like berries.  

Until I learned the joys of frozen all-butter puff pastry, I couldn't for the life of me figure out how to make a good tart using fresh strawberries. All you do is make a quick pastry cream – which is way less involved than you might think (much less tricky than making most custards), blind-bake a crust, spread the pastry cream on top, and cover with berries. If you want to be fancy you can melt some fruit jelly and glaze the berries, but you don't have to. 

I also made a pretty wonderful tart using mixed berries – blackberries, blueberries and raspberries. That one is super easy because you don't have to stem or slice or pit anything -- just toss the berries with a little orange liqueur before dropping them onto the pastry cream.

Easy pan-roasted seafood antipasto turns a simple pasta dinner into a special event

A funny thing happened on the way to my okonomiyaki.

You know, okonomiyaki – the Osaka-style seafood pancake that homesick Japanese transplants in America go wild for. It's sort of become a cult thing, maybe because it's crowned with katsuobushi – bonito flakes – which wave mysteriously around, making the thing look as though it's alive.

I'm working on a recipe for okonomiyaki; I promise.  You can see a video of my last attempt (it's close! nearly there!) on my Cooks Without Borders Instagram feed. In fact, I'd bought all the ingredients to make it a few days ago – squid, shrimp, scallops and more, thinking I'd nail it that evening.

"Oh, man," said Thierry. "Okonomiyaki again?!" Yeah, yeah, I'd already made it twice in just a couple weeks, but the third time's the charm, right? Recipe development can be a process of trial and error, and this one – which diverges from traditional ones – has proven to be tricky. 

But I'm nothing if not flexible, so I did a quick pivot – Japan to Italy. I knew there was a bottle of crisp white wine in the fridge, along with some parsley, and baby arugula. We have a giant rosemary bush out back. A warm seafood antipasto, I was thinking – that would be lovely with an arugula salad. It would be nice to eat light.

I turned to an old favorite cookbook for inspiration: Evan Kleiman's Cucina del Mare: Fish and Seafood Italian Style. Kleinman is a wonderful chef who for many years had a beloved restaurant in Los Angeles called Angeli that delighted Italian food lovers for decades. When I moved to Dallas in 2009 as a then-incognito restaurant critic, a commenter on one of the local food blogs tried to out me by posting my photo online. Ha! The photo wasn't me, it was Evan Kleinman. That cracked me up. Nice try, amici miei

The recipe I found was for pan-roasted squid, calamari arrosto. Kleiman gave the squid a toss with olive oil, fresh rosemary, garlic, salt and pepper, popped it in the oven, roasted it for 25 minutes, then gave it a squeeze of lemon and a parsley garnish. Nice!

I used the same method with the shrimp, squid and scallops, tossing in some halved cherry tomatoes. It worked beautifully. And so easy. 

We poured glasses of crisp white wine, and I tossed an arugula salad. We sat down to a perfect, light, simple dinner, which incidentally would also make a lovely lunch.

In spite of its simplicity, the dish's taste is pretty snazzy. I'm always looking for an easy and delicious antipasto to jazz up a pasta dinner, and this certainly fits the bill.

Fall in love with the most versatile warm summer salad in the universe

Are you a friend of okra? If so, you'll love this warm summer salad or summer squash, sweet cherry tomatoes, grilled corn and grilled okra. 

Are you anti-okra? You, too, will love this warm summer salad: That's because you can leave simply leave it out. Add grilled eggplant. Or some cooked black beans. Or fresh green garbanzos, if you score them at the market and you're wondering what to do with them.

I'm calling it a warm summer salad because I conceived it to be eaten warm. But it's also great at room temp. Or even straight out of the fridge the next day. 

It may be the most versatile warm salad in the universe.

It's great with cheese crumbled on – queso fresco or cotija, for a Mexican or modern Tex-Mex feel. Feta gives it a Greek accent. Shaved ricotta salata spins it Italian, especially if you make it with basil. Try cilantro, if you want to be more Mexican, or parsley for more Greek. Or mint. It's a salad without borders.

 

Leaving off the cheese sacrifices nothing – and makes it vegan.

It's fabulous as a starter or main course salad on its own. Serve it next to or under some grilled fish or chicken or lamb (or beef or pork or tofu . . . ) and you've got a gorgeous, cheffy main course. 

See what I mean? It's versatile. 

Don't feel like grilling the corn? Don't worry – just cut it raw off the cob and toss it in with the squash. Want to use more of one vegetable and less of another? Go ahead – it's a free country. Use balsamic or red wine vinegar in place of the sherry vinegar if you like. Throw in a handful of toasted pine nuts, or a spoonful of leftover basil. Serve it on a bed of quinoa or lentils or arugula. Or toss some arugula or microgreens on top. 

It's your salad. Now go for it.

Did someone say 'butterflied leg of lamb'? Fire up the grill for a dreamy Mediterranean dinner

Border-free cooks, this may be the perfect summer dinner – especially if you're in the mood for Mediterranean flavors. Grilled butterflied leg of lamb, with asparagus spears thrown over the coals at the same time. A couple of fabulous salads to start, from the James Beard Award-winning cookbook Zahav: A World of Israeli Cooking. A gorgeous tart to make the most of sweet-and-ripe summer stone fruit. 

It's ideal for laid-back entertaining (eat outside!) as nearly everything can be done ahead. 

Friends were coming over last night, and I knew we'd want to relax and hang out, maybe have some nibbles before dinner and a glass or three of rosé before I lighted the charcoal on my old-fashioned Weber. A butterflied leg of lamb on the grill sounded about the right speed; I've been craving summer's char. 

Flipping through Zahav, I happened upon a couple of salads that spoke to me.

The first was quinoa, pea and mint tabbouleh. Irresistible, right? So smart of chef Michael Solomonov (who wrote the book with Steven Cook) to swap quinoa for the traditional bulgur wheat, and toss in peas to play with the mint. No need to use fresh peas when frozen ones (so stress-free) do just fine. 

The dish was as wonderful as I'd hoped – and then some.  I'm going to make it again, pronto. The recipe serves 4 to 6, but next time I'll probably double it so I have some left over for the next day. So good! I can't wait for you to try it and tell me what you think.

I served that as a first course before the lamb, but first we had nibbles: some marinated gigante beans I found at the olive bar at Whole Foods (speared with toothpicks – crazy, right?); spicy pickled okra (also from the olive bar); roasted salted cashews; and Castelvetrano olives (my faves).

But the star nibble was charred eggplant salad from the Zahav cookbook. To make it, you char halved eggplants on a grill or stovetop grill – I used the cast-iron grill that fits right on my stovetop – cut-side down, until the flesh is "like pudding" in texture. It took a long time – about 45 minutes. Alternatively, you can do it under a broiler (cut-side up). Scoop out the flesh (discarding the charred exterior), and use a spoon to beat it to creaminess with minced raw garlic and olive oil; then you stir in salt. The recipe called for topping it with half a cup of chopped fresh parsley, but that turned out to be too much; I cut it down to a quarter cup, stirring half of it into the salad and using the rest as garnish on top – just right.

It was pretty delicious – the proportions were otherwise perfect – and I served it with triangles of whole-wheat pita bread toasted in the oven. I felt it would be even better with a zing of acid, so I squeeze in half a lemon, and it went from delicious to dreamy. 

If you own the cookbook, you might notice that the photo with the eggplant salad recipe is more reddish in color than mine turned out, flecked with something that looks like small bits of roasted red pepper or tomato. Hmmm. Very intriguing. There is a variation offered: adding a cup of tehina sauce turns the salad into baba ganoush (eager to try!). But no other variation is mentioned. It seems like a recipe ripe for improvisation. 

The timing on this dinner is very easy, as you can made the eggplant salad, tabbouleh and dessert in advance, letting the lamb bask lazily in its marinade (olive oil, red wine vinegar, crushed garlic, chopped mint and cilantro, salt and pepper). Rather than keeping the lamb tied up after it's bones have been removed, you unroll it so it's flattish – that way it absorbs more marinade, cooks more quickly and gets more charred surface. The marinade, meanwhile, is one you can play with, depending on the flavors you want – maybe rosemary and/or thyme instead of mint and cilantro, or more or less garlic, maybe Aleppo pepper or cayenne rather than black pepper. You get the idea. You can marinate it for a couple of hours, or overnight.

Once you're ready to grill and the coals are hot, wipe the marinade off the meat (be sure to bring the meat to room temp for about an hour first) and spread the lamb flat on the grill. Toss some asparagus spears in a little olive oil and salt and throw them on the grill next to the lamb after the lamb has been on there two or three minutes. Keep the grill covered to prevent flare-ups, and flip the meat after 6 or 8 minutes. You'll want to keep an eye on, as it the cooking time can range from 12 to about 22 minutes total depending on how hot the coals are, the size of the cut and how done you like it. If you're going for medium-rare, aim for an internal temperature of about 130. But don't worry if it goes past that – even if it's done to medium it's really good.

Once it's done, be sure to let it rest for at least 10 minutes, so it's as juicy and tender as can be. Go ahead and serve the tabbouleh as a first course (or whatever you've dreamed up – the tabbouleh is also really good with the lamb!). By the time you're done, the lamb will have rested long enough. Slice it (across the grain), laying the slices on a platter and pouring over them any juices that have collected on the plate as it rested.  Oh, man – you are in for a treat! Serve it with the asparagus. If you're tired of asparagus, you could just as well have done zucchinis quartered lengthwise on the grill – that would be great with it, too.
